Ginme your chicken salad recipes!!

I'm officially addicted to the chicken salad Costco makes. I bought some last week when we went shopping. DH and I polished it off Saturday. DH left this morning for training for work and is out of town until Friday... so I took the babies to Costco while Lydia was at school JUST for more chicken salad. It's way too much for me to eat on my own before it goes bad so I stopped at my ILs and made them take half. Just so I could have some. I need a recipe so I can make some myself!!

I LOVE chicken salad. This is a lightened up version that I've liked and eaten a couple of times.

2 1/2 cups diced chicken, cooked

1 cup seedless grapes, halved

2 Tbsp parsley

1 cup mayo

1 cup chopped celery

1/2 cup sliced almonds

1 tsp salt

1/2 cup whipping cream

Whip the whipping cream to a froth. Add mayo, parsley and salt.  Blend well.  Add chicken, celery and almonds, coating thoroughly.  Add grapes, gently tossing ingredients.  Chill at least 4 hours before serving.

This chicken salad is AMAZING.  It's a lot simpler to make than it seems.

this is yummy! i haven't made the recipe exactly (i never do, but with this one i didn't have everything on hand.) i'm sure it would be even better exactly as written. got this recipe from Auroraloo a couple of months ago

i hear you on the costco chicken salad though. it's soooo good! though it's given me a stomach ache several times after eating it, then i read (in their own magazine) that they make it with the rotisserie chickens that don't sell within a few hours. which obviously isn't a big problem or people would be getting sick all the time & they wouldn't do it. maybe our store is doing it wrong, IDK but it makes me sad b/c i want it!
