Meals are very basic this week because I am working some evening shifts:
Mon--leftover mac & cheese, broccoli, pinto beans Tues--flatbread pizzas and salad Weds--Moroccan chicken (slow cooker), couscous, some kind of veggie Thurs--breakfast for dinner Fri--fish tacos Sat--dinner at my parent's house.
DH is out of town this week so DD#1 and I are going basic: Monday and Tuesday- dd turkey quesadillas and raw vegis; me turkey taco salad (I got TDs recipe from this month's Women's Health magazine.) Wednesday - chicken soup w extra chicken and vegis Thursday - grilled cheese, salad and tomatoe soup Friday - take out
I have zero plan. I sort of had a mommy melt down on Sunday when my children approached the table yet again with "eww, i don't like that". I told them I was not cooking anymore and to figure it out themselves. Now, thats a tad of an overreaction I agree. DH and I both do cooking duties but I usually am the meal planner. I told him it's all up to him this week bc I am tired of getting the "eww" from the kids every night except pasta night. So, last night was trader joe's fish, veg and mac n cheese. Let's see what tonight will be....
Generally, do your kids protest meals or eat whatever is for dinner? I feel like I'm banging my head lately.

My DS is 3.5 and after I tell him what we are having for dinner his usual response is "I don't like that." That being said, he does usually eat what I fix. I tend to meal plan towards meals that I know he will eat. For example, he doesn't eat casseroles with vegetables mixed in so I don't cook those. He is good about eating meat, so I do a lot of chicken and meatballs.

It depends on the day and kid. My philosophy is "this is what is for dinner" - they have to try everything on the plate and then can fill up on the items that they are interested in that are for dinner. Now I don't go out of my way to cook odd things I know they will dislike so our dinners are pretty reasonable. They have learned to expand their palates.

I have a very selective eater (DS) and a generally enthusiastic eater (DD). Dinner can be tough, but it helps that I plan a month at a time. It doesn't take much longer than planning a week, and then I don't have to worry about deciding what's for dinner for a whole month.
My meal plan is on my blog - https://www.dashofreality.com/meal-plan-week-3/
I will second the selective (nice choice over picky) eater and enthusiastic eater. DD seems to be getting worse lately, but I put something on her plate that I know she will eat and then she gets what we are eating. Most of the time she doesn't eat it. If she tries a bite of everything she can have peanut butter (rarely happens), otherwise she can have an apple or a banana after dinner that is it. It sucks.
Monday -- crunchy pork belly with peanut sauce served over jasmine rice Tuesday -- Grilled Fish stuffed with tomatoes Wednesday -- Tofu and Mushroom sautee over ricep Thursday -- Bockwurst with stewed tomatoes and buttered rice i know -- hefty carbs) Friday -- Mung Bean Soup, fish fille (breaded)
As for reactions of DD -- well she does say when she doesnt like it but i really encourage her to give it a try

My kids vary, sometimes they will turn up their nose at something they previously loved. With 2 toddlers there's always something they don't like. I encourage them to at least try everything (doesn't always happen) and to eat as much of whatever they do want. I do not make them a separate meal if they don't eat it. We eat spaghetti and meatballs or ravioli way too often b/c those are their favorites. It also helps a ton if I have dinner ready to go as soon as we get home. If dinner isn't ready and they have to wait 20mins, they scream for a snack and then don't end up eating much dinner. It's really frustrating b/c we don't get home until 6pm and they are starving by then.

Your crock pot chicken florentine looks delicious. Both DH and DS hate cooked spinach (DS will eat spinach salad) but I might have to try it anyway.

Thanks! My DS won't eat sauted spinach, but will eat the frozen cream spinach kind. I'm impressed with the spinach salad. DD likes to use the tongs to put salad on her plate, but that is about as far as we get. I make a simlar recipe that is spinach an artichokes. You could try subbing out the spinach for chopped artichoke hearts.
