I have plans to make shrimp scampi except I noticed my recipe calls for wine.
Should I leave it out or use chicken stock? I have no wine/alcohol in the house.

You can typically use stock and wine interchangeably in many recipes. IMO, wine adds more/more interesting flavor, but chicken stock will work just fine.
I tend to agree, but DH is a recovering alcoholic so I don't keep any wine/alcohol in the house or cook with it.
