We have a storm approaching and I'd like to head to the store and grab somethings but I need a few dinner ideas! What do you all have on your menu?

  • Had spaghetti and meatballs last night. With leftover meatballs making meatball calzones tomorrow night. Tonight is a sweet potato soup.

  • Kielbasa and sauerkraut today and tomorrow

  • We have a storm coming too so I stocked up. Last night I made chicken and shrimp Jumbalya which was good. Today is pot roast, tomorrow tacos or buffalo chicken salads. I've been trying tons of stuff from the skinnyms.com site and so far they have been good.
  • Last night I made mexichicken- chicken breasts seasoned with taco seasoning, topped with salsa and melted cheese.  Tonight will be leftovers.

    Meatball Calzones
    - 2 (13.8 oz) cans refrigerated pizza crust dough
    - 9 meatballs
    - 1.5 cups sauce
    - 1.5 cups shredded cheese

    Preheat oven to 400 F.
    Line 2 baking sheets with parchment paper.
    Unroll 1 can of dough on each sheet. Cut into 3 equal portions
    Sprinkle 1/2 C cheese on 3 portions of dough.
    Cut meatballs in half and place 6 halves on dough portions with cheese.
    Place plain dough over the other dough portions and press edges to seal.
    Bake 12-15 mins or until golden brown.
    Heat sauce and serve with calzones.

    Let me know if these directions are unclear.
