So Mondays keep going by without me realizing it. I am determined to keep this New Years res though!

  • 1. Wasn't what I planned, but I made Mac and cheese from scratch and put in some ham and peas. I was very proud that there were no packets of orange powder involved!
    2. This week I am going to try a shepherds pie recipe that has bacon in it and cheese on top. I cut it out of a magazine years ago and never made it.
    3. My dad's favorite dish growing up was Hot Dog Casserole which had hot dogs, elbow macaroni, and velveeta cheese. It was pretty delicious!

  • 1. I made hamburger and rice stuffed peppers
    2. I just bought quinoa and have never used it before. I'm thinking a ground turkey and quinoa casserole I found
    3. Fried bologna sandwiches. One of the only things my dad made after my parents divorced lol
  • Last week I made 4 meals!!! For a rookie I thought this was pretty good! :) I made Chicken Tortilla Soup, Creamy Chicken Casserole, Garlic Chicken Orzo, and Tacos! I loved it. I felt like such an accomplished mommy and wife to have dinner waiting for my husband when he came home. 

    This week I am working in the evenings so no cooking until the weekend. I am going to look up something good now...

    Pork chops and rice-a-roni hahaha My mom would probably be embarrassed if she knew this gem of a meal brought back childhood memories but for some reason it does! I love pork chops... and rice-a-roni! hahaha
  • I made slow cooker pepper steak and it was great. 

    Nothing new planned for the next few days. I'm so llaazzyyyyyy I don't even feel like cooking. 

    Ramen Noodles are the food of my childhood. I'm not going to lie, I still break open a package once in a while. No one is ever too good for Ramen. The creamy chicken is current fav but growing up it was Ramen trifecta- Beef, Pork or Chicken. With a cup of Tang, whaaaaatttt?!!! LOL
  • 1. Last week I made this lentil sausage soup, whoa is it delicious. It comes together quickly too, doesn't have to simmer for hours or anything so I would consider it a good weeknight meal. https://www.foodnetwork.com/recipes/ina-garten/lentil-sausage-soup-recipe.html

    2. This weekend I am going to try this tomato soup from smitten kitchen https://smittenkitchen.com/blog/2011/09/roasted-tomato-soup-with-broiled-cheddar/    Yes that is a lot of soup but I am in Chicago and it is cold.

    3. Ramen is also the food of my childhood! I know this is weird but I ate it every morning for breakfast in high school. Healthy right? I still and will always love pork flavored Ramen.
