Meatless?!?

Spin off from the grocery budget thread. Several have said they do meatless once a week. What do you fix? I wouldn't know what to fix other than "soup beans and taters" lol.

  • I really like the chipotle black break burgers. I can't remember the brand...Garden something. It comes in a green box.

    Also, hummus when eaten with bread is a complete protein. Sometimes for lunch I'll have a couple of tortillas with hummus in them and veggies and whatnot.

  • Meatless baked spaghetti with zucchini, yellow squash, green olives, black olives and Serrano peppers.

  • I guess our problem is we don't eat that many different kinds of vegetables. We don't like onions, tomatoes, peppers, ect. Hubby also doesn't like pasta :(
  • Tofu stir fry (really.. Tofu is nothing to be afraid of), chili with lots of beans, waffles (I just found a high protein waffle mix at Costco), breakfast burritos (not meatless, but only uses a couple sliced sausages), veggie lasagna, veggie soup, bean burritos, bean or spinach enchiladas, etc.

  • Veggie burgers, pasta, soups, salads, pizza, burritos, quesadillas, chili, lasagna- we eat a lot of meals that traditionally have meat but just prefer the vegetarian versions.

  • We eat mostly vegan.  I make lots of soups and stews, and we eat a lot of Mexican and Indian dishes. 

    This week we've got:

    couscous with chickpeas, carrots, zucchini, and bell peppers

    tortilla espanola with bread and salad

    black bean tacos with rice


    peanut stew with greens, cauliflower and chickpeas

    and LO & I are on our own for a few nights, so I'll probably make pasta then as H won't touch the stuff

  • We actually only eat meat a few nights a week at most. It's not really on purpose, that's just how our menus are, I guess. We eat burritos, potato soup, pancakes/french toast, quiche, omelettes, pizza, spaghetti (sometimes we do put sausage in it).. can't think of any more right now. :P

  • You should google some Vegetarian or Vegan food blogs. There are TONS and they're usually quite amazing. I love Would Rather Gather. You can make almost anything meatless.

  • My fiancé and I are vegetarians and we use this recipe for quinoa patties a lot. Quinoa is a great source of protein. Last night I used the recipe to make "meatballs" and tossed them with some marinara over some pasta. Sometimes I use it to make veggie burgers. I take the patties with me to work to give me a boost if I get hungry during the day. I love them!
