vegetarian food for toddler?

My son refuses to eat any form of meat. We try to mix it in with his food and he purposely picks it out. 

Any ideas what we can do or good vegetarian recipes?

We do peanut butter a lot as a protein source, but not sure if you have allergies. My kids love black beans, edamame, hummus. Not sure if you are avoiding seafood as well, but my kids LOVE boiled shrimp or any sushi (snowcrab, california rolls, veggie rolls- nothing raw yet).

No allergies as of yet. Ill have to try it out.
