It turns out that a whoopie pie pan makes eggs the exact size for English muffins. I bake a dozen of those and toast the English muffins on another rack at the same time. Add cheese etc (current batch has creamed spinach), wrap in parchment, put in a gallon Ziploc freezer bag, stash in the freezer in the breakroom. Lasts three weeks for about 30 minutes of work.
(And by creamed spinach I just mean a bag of chopped frozen spinach heated with a package of Light Swiss Laughing Cow wedges.)
Granola bar at my desk in the morning. DS eats breakfast when he gets to daycare (I am always so thankful that I don't have to worry about feeding him a balanced meal in the morning)
I used to eat cereal allllll the time. Any meal. And then DH and I went grain free for a while (I'm not anymore) but I went months without cereal and now I can't eat it without getting really gassy. Too much?? lol
