I have mostly used mine for soups so far. Butternut squash soup, mexican gumbo, etc.

I'm making cauliflower mac & cheese next week, and I'm considering whipping out the immersion blender to make the cauliflower disappear into the cheese sauce rather than leave it in clumps like I usually do.  I need to get more creative with using it to trick DD into trying new foods.
