NTPRR - favorite winter soup recipe

OK ladies, here is the challenge. Mh has taken care of most of the household chores over the past year while I have been continuously undergoing treatments. he is working a ton of hours over the next couple of weeks while i am off for winter break, and i want to show my appreciation for all of his efforts over this last year.

he is a soup lover, me not so much so i don't have many recipes in my arsenal. with 5 inches of snow on the ground, i am looking for tasty winter soup recipes. ideally, they would be healthy and could be adapted to be gluten free.

hopefully, this will be beneficial to all!

    This is hands down my favorite soup recipe: Butternut Squash Soup. Easy to make and always a crowd pleaser. The secret ingredient is the cream cheese! If you use lowfat or fat free cream cheese it would be healthier (and I only use one block of it, not two.) It's naturally gluten free. You'll love this. Just talking about it is making me drool.

    2/16/13 - First BFP of my life @ 6dp5dt! EDD 10/30/13
    3/27/13 - After beta and u/s hell, no heartbeat ever detected. D&C at 9w1d.

    6/5/13 - Adopted four new embryos that had been frozen for seven years!
     
    9/12/13 - DEmbryo FET #2. Thawed and transferred two beautiful blasts
    9/17/13 - BFP @ 5dp6dt! EDD 05/31/14
    9/29/13 - m/c @ 5w1d. :(

    11/19/13 - DEmbryo FET #3. Thawed and transferred one blast from each batch. Wow!
    11/23/13 - BFP @ 4dp6dt! EDD 8/7/13
    Beta #1 @ 13dp6dt - 522  Beta #2 @ 16dp6dt - 1373 
    6w5d ultrasound showed one perfect baby with a beautiful heartbeat of 134bpm!

    Snowflake baby is a girl! 
    Our beautiful Snowflake girl arrived on July 22, 2014!

    Oh man I will be watching this!  Sadly I am also a disaster outside of the baked goodies sphere, but if somebody had a good recipe for ginger carrot soup I would love them forever.

    It's not specifically a winter soup, but it's a favorite of mine & DH's. I make it at least once a month.

    I use chicken tenderloins instead of breasts. I take them out and shred them about an hour or 2 before it's done cooking, then put it back in the crock pot. Also, I add a little extra cumin and a couple sprinkles of minced garlic (the kind you buy in the spice aisle.) My sister claimed it was the best tortilla soup she's ever had. :)

    Just book marked the recipes! DH loves soup and I've been making some crockpot batches and freezing it so I don't have to cook as often (DH works second shift for the winter so I need to send dinner with him..)

    TTC #1 since 8/1/10; Me:41 and BRCA1+, DH:46
    DOR (FSH 24.3)/ terrible egg quality ; homozygous MTHFR c677t
    5 IUI's: 2/11 to 6/11 and 1/12= BFN
    OE IVF#1-4 8/11-6/12= all BFN

    IDK if there is any other vegans on the board but this a great soup even my none vegan family love it!!!
    I also make rice & put it over it so good

    Sweet potato lentil stew
    Ingredients (Serves 4-6):

    1/4 cup olive oil

    1 medium onion sliced

    2 small tomatoes diced

    1 teaspoon fresh ginger minced

    1 1/2 teaspoons turmeric

    1 teaspoon cumin

    1 teaspoon ground coriander

    1/2 teaspoon ground cinnamon

    1/8 teaspoon cayenne

    sea salt

    2-3 medium sweet potatoes, peeled and cut into 3/4″ cubes (you can add more if you like)

    7 cups vegetable broth

    1 cup brown lentils

    Directions:

    Heat oil in large, deep pot. Add onion and stir until it starts to soften-about 2 minutes.

    Stir in tomatoes and ginger. Cook for about 3 minutes.

    Stir in turmeric, cumin coriander, cinnamon, cayenne and a pinch or two of sea salt

    Cook and stir for 2 minutes. Add more salt if necessary.

    Next, add sweet potatoes, broth and lentils.

    Bring to a boil over high heat.

    Cover and simmer for 40 minutes or until the lentils and sweet potatoes are soft.
