Mac 'n' cheese

I need a good tried and true mac 'n' cheese recipe. Anybody have one?  The one I used last year totally bombed yesterday, so I don't want to repeat that on Thursday.  Bonus points if it's a crockpot recipe. :)

Re: Mac 'n' cheese

  • Mine is not crockpot, but it is killer. I don't have it at the moment, but I can text it to you when I'm home. It's my mom's recipe and quite frankly the best mac n cheese in the entire universe.

  • I have the panera recipe. So good but not crock pot and makes a ton.
Will you share?  You too, @lewispm. :)

  • Ok, I will post it on here then too :)

And it involves Cracker Barrel extra sharp cheddar cheese. That is key!

I make it like four times a week for lunch and it's just as easy as Kraft.

Equal parts noodles and milk. (I usually do a cup of each, but you can make more or less. Whatever.)
    A little butter.
    Lid ON.
Med-high heat until it starts to boil. Stir and turn it down to low.
Let simmer 10 min, or however long your noodles take.
Stir in a little cream cheese til it melts. (1-2T)
Stir in shredded cheese.. Half the amount of noodles you used.
    Salt and pepper to taste.

*the cream cheese step can be eliminated.

  • Butternut squash macaroni and cheese is fabulous.  I've made this one and it was a huge hit, can't wait to make it again soon.  https://www.fitsugar.com/Healthy-Mac-Cheese-Recipe-26128868

  • Here's my baked mac n' cheese recipe

    Grease square 9x9 baking dish

Measure out 2 cups uncooked pasta (elbows, whatever).  Cook until al dente.  Drain.

    Combine:
    Cooked Pasta
1 lb cheese (save some to put on top!)
    1/2 stick butter
    2 eggs
    1 can evaporated milk
    Salt & pepper as desired

    Bake for 30 minutes at 375 F.

Alton Brown's recipe is fantastic https://m.foodnetwork.com/recipes/18422 I've only made that maybe twice though. At home I usually just kind of eyeball and throw milk, butter, cheese, and a little flour on the stove. Pour over cooked noodles and then add more cheese on top with some black pepper.

This is my go to Mac and Cheese recipe. It's been a hit with friends in the past and is super easy.

@LewisPM I'm still waiting for this amazing recipe!!
    :P

Golly gee whiz how did I forget?!? I have it in paper form only so Ill have to snap a pic when I'm home next. It looks a lot like the Alton Brown recipe mentioned above, but a little different and, again, Cracker Barrel Extra Sharp Cheddar is key. Hopefully I will remember tonight!
