Roasting potatoes???

We are making a whole roasted chicken for dinner tonight. It will take about 2 hours to cook.  I want to do roasted potatoes with it.  I thought I would peel & cut the potatoes in half (they are really big baking potatoes), toss them in olive oil & garlic then put them around the chicken while it is cooking.  I have never done this before, is two hours too long?  Should I put them in later?

Any suggestions appreciated!

  • I've done chickens that were probably smaller at 1.5 hours and I just put potatoes in right with it. They should be fine.

  • Unless you have a roasting pan that has lifts the chicken and potatoes out of the grease and juices, you may end up with greasy, soggy potatoes. Otherwise, it sounds yummy!

  • I usually bake them for about an hour, for medium sized potatoes.  Yours should be fine at 2 hours.  Can you really have an "overbaked" potato? ;)
