Monday - sausage and tortellini soup (made yesterday for the week)
Tuesday - bbq chicken quinoa
Wednesday - leftover soup
Thursday - leftover quinoa
Friday - homemade pizza and salad
Saturday - out
I've been trying to make something on Sunday that will last for 2 days during the week - soup, sauce, etc. So far, so good! All I do is reheat and maybe throw together a salad. After DH suggested it, I'm also going to double whatever I cook on Tuesday, so that will be 2 meals. So pretty much I'll be down to cooking twice during the week. If it doesn't get boring, this might just work!
I cook a lot of meals with the intent of having it two nights. My kids (ages 16 & 2) do not mind. With DH living in Texas & us in NC it makes things simple.

I love this thread, but I have to stop reading it! I'm between meetings, and my prego stomach is growling so loudly I'm pretty sure they can hear it in the hallway. We are having a very weird week, so no meal plan for us this week. Next week, it's back to the Sunday planning! You guys have given me some fab ideas for new stuff. (hello, crockpot buffalo chicken sammies and crockpot jambalaya! How have we never met before??)
Mon--quesadillas, black beans and rice Tues--fish sticks, quinoa, asparagus Weds--pasta, salad, bread Thurs--salad and sandwiches Fri--BFD Sat--penne pasta with roasted butternut squash, salad, bread

I cooked a ton yesterday, so we have a decent amount ready this week:
Monday: homemade mac and cheese Tuesday: omelettes w bacon, green onion, tomatoes Wednesday: beef ragu w pasta Thursday: freezer meal chili w cornbread and coleslaw Friday: take out or leftovers
My sister gave me this great recipe, I call it "Sicilian Spaghetti" even though it has nothing to do with Sicily, lol.
Ingredients: -Tri color spiral pasta noodles (box) -ground beef (1lb.) -sautéed onions (1/3 cup chopped) -1 jar of alfredo sauce -1 jar of marinara (with mushrooms and green peppers)
It came out very good, served with a tossed salad and garlic bread.
Not sure what DS is cooking tomorrow. It's usually always something tasty.

I'm going to a seminar most of the week so I'm doing a lot of crock pot meals:
Monday: tacos
Tuesday: BBQ pulled pork sandwiches (crock pot)
Wednesday: Turkey stuffed peppers (recipe isn't a crock pot meal but I'm doing them in the crock pot and hoping they turn out alright)

DS2 - Oct 2010 (my VBAC baby!)
Monday - school fundraiser at California pizza kitchen
Tuesday - brisket, sweet potato fries, broccoli
Wednesday - wraps with leftover brisket or butternut squash. Will add some black beans, cheese corn, and avocado.
Thursday - either lazy hotdog and Mac and cheese night or shrimp, kielbasa and saffron rice if my in laws come over.
Friday - Slow cooker meat sauce, pasta, crusty bread, and salad.
