cookie dough

We ordered some cookie dough through our niece's school for a fundraiser.  I was so excited to get it, it is frozen and already in little proportioned blobs.  I read the package tonight and it says it can be left out at room temperature for 21 DAYS and it is still fine to eat or bake.  WTF kind of chemicals are in this stuff?!?!

    It might just be ultra-pasteurized, which actually makes dairy products shelf-stable until they are opened. But in the case of bulk cookie dough, my money is on chemicals.
