I'm going to a chili cook off this weekend- and the winner goes to most creative ingredient. DH didn't like the breast milk idea...;)
I also thought of chocolate, cinnamon, red wine, etc...but those aren't really "unique" are they? Any ideas?

What about a creative protein? Can you get your hands on some elk?

I have a friend who hunts that will most likely do venison...I don't know about elk but I know our grocery store has bison...that may be a good idea! I've personally never had either type of those- is it like beef?

We eat a lot of ground bison. It's a lot like beef, but with less fat.

I love bison. It should work well. Maybe truffle also. It tastes good with anything.

I only ever use venison in chili.
Pumpkin sounds good.
You could do white chili with pheasant. Or duck. Or goose.
