DH has Mondays off, so I requested this morning that he get sushi and smoked salmon for himself from Kroger (he's been asking for it), and I would have a frozen dinner or something. I will probably be working on a project all night for work, and I knew I wouldn't have time to cook dinner.
Well, bless his heart, he made salmon three ways: smoked on cucumbers with cream cheese and capers, sushi, and grilled teriyaki salmon. He also made sautéed broccoli and snap peas and Japanese eggplant with peanut sauce. So what was supposed to be a simple, easy dinner ended up being quite elaborate, but it was really sweet and thoughtful. He said he wanted me to have a good dinner since I'd be up late working.

Super easy (after prepping the stupid butternut squash), cheap (especially since the swiss chard came from our garden), healthy & it makes a ton.
