looking for some new ways i can prepare chicken for my 11 month old.

Creamed chicken & veggies over biscuits, pulled chicken w/ BBQ sauce, chicken enchiladas, (white) chicken chili, chicken spezzatino (great recipe in one of Giada DiLaurentis' books), chicken in lemon cream sauce with pasta (another Giada recipe), pot pie, the sky is the limit.

We do a lot of slow cooker chicken and pork recipes - it turns out nice and soft, and since it cooks so long and gets so hot, I don't worry about salmonella. He eats just about everything we do, I just decrease/cut salt and watch the spice levels. But I've been surprise that he's liked curry and some mexican seasonings.

I mostly do poached chicken thighs, so they stay moist and soft.  I then shred it and use it in all sorts of different dishes (eg, pasta with pesto, chicken salad, pilaf, etc).
