Since I'm a planner, I've started planning my Christmas cookie list already.  My list so far:

Peanut butter balls (aka buckeyes)

Ritz cracker things (ritz cracker/PB sandwiches dipped in chocolate)

Peppermint bark

Chocolate truffles

Peppermint meltaways (shortbread cookies with peppermint icing)

 

This year I'm adding in gingerbread men so the girls can decorate.

 

What are you guys making? I need one more recipe in case one of the ones listed above doesn't work out.

We always make and decorate a load sugar cookies.  I kind of make the best sugar cookies ever.

I love Swedish butter cookies. This recipe is good. You can also do the thumbprint ones (they're easier).

Dhs Gma used to make these pecan cookie balls covered with pwd sugar. So yum! And they've become a tradition PM if anyone wants recipe. I'm on mobile right now

Missy's sugar cookie recipe

2 C soft butter

2 C sugar (I like to add about 1/4 C extra)

3 eggs (I receive farm fresh eggs

2 tsp vanilla

6 C flour (I usually begin with 5, and add a little more depending on the texture)

1 tsp baking soda

Mix butter and sugar.  Add eggs and vanilla.  Blend in baking soda and flour.  I like to do one cup at a time of the flour.  I rarely end up with the 6 cups, but I will add more after 5 if needed.  Refrigerate overnight. Bake for 8-10 minutes at 350.  My oven makes them perfect at 9 minutes.

You're not so bad yourself.  Seriously, though farm fresh eggs are the best.  I also should add I like to make mine thick, so I don't roll them out super thin.  

FFSC: I don't make my own frosting. I use store bought.

Oh, I also forgot to mention we almost always make several different types of fudge.  Peanut butter fudge is always a hit.

I always make Hershey's peanut butter blossoms during Christmastime.

My neighbor made the most AMAZING date cookies for last year's cookie swap, and I HAVE to get the recipe!

I make chocolate chip, russian tea cakes, sugar cookie cut outs, buckeyes, peanut butter, and sometimes snickerdoodles.

Buckeyes

2 cups powdered sugar
1 1/4 cups chunky peanut butter (Jif)
1/2 cup regular peanut butter
2 cups rice krispies cereal

Form your balls and put them on a tray.

I use nestle tollhouse chocolate chips to top.
Melt them in the microwave. Apply to tops of cookies only with a spoon in a swirling motion.

Place in fridge until the chocolate sets.

I always make sugar cookies with fun frosting decorations. I also enjoy making oatmeal maple cookies. The recipes are from a 1950s edition of the Betty Crocker cookbook.

How do you make truffles? Can I get on your Christmas list? I have been mostly nice and a little naughty

That's all the baking I am doing. I'm sure DD has a list 3x as long as mine. She'll be in the kitchen a ton. Cookies taste better when someone else bakes them. Fact.

These are delish but I couldn't find the icing for the faces last Christmas. Luckily they had black and orange for Halloween so I am prepared.

I already did gingerbread cookies. We may do walnut horns and short bread bites. Definitely doing rugelach (cookies rolled up with raspberry jelly, walnuts, and chopped apricots, dusted with cinnamon sugar). Still trying to decide on another. I'm doing home made jams and baked goods basket and a home made soaps and spa type basket. Its @wineomite's fault. ETA: e Elephant ears too.

I love baking, but am terrible at planning for anything, plus it can be expensive.  I plan on making pumpkin cookies and maybe a few other things. The less ingredients and prep time, the better. (For some reason this always usually involves some kind of balls recipe.)
