We haven't done this in awhile and I'm looking for inspiration. 

Also, as a GTKY, how many dishes do you usually make for one meal?  Do you try to do one-pot meals or do you make a main dish and a couple of side dishes? Now that it's getting cooler outside, I've been cooking more and I feel like I'm drowning in dirty pots and pans.  I love cooking, but I hate doing dishes.  It's so hard to find a balance!

  • Sunday: Grilled burgers, grilled, marinated zucchini, baked beans

    Monday: Homemade pizza with turkey pepperoni, red peppers, and onions

    Tuesday: Baked lemon pepper tilapia, pasta salad, roasted potatoes

    Wednesday: Pot Roast with egg noodles, roasted butternut squash

    Thursday: Breakfast food - scrambled eggs, turkey bacon, hashbrowns, fruit

    Friday: Pork chops with brown rice, steamed asparagus

     

    I actually prefer casserole type dishes that use less pots.  Unfortunately my husband is not a big vegetable fan.  Pretty much the only "veggies" he eats are corn and potatoes - not really veggies.  So he complains when I mix veggies in with his meat.  So I do a lot of side dishes instead. He does the dishes in our house though!!  Usually I cook while he works on homework with DS1 and plays with DS2.  Then we all eat.  Then he does dishes while I bathe DS2, finish homework with DS1, and read to both boys.  Works out well for us!

  • Thanks for posting this.  I'm looking for food inspiration tonight.  I'm a one-pot meal kind of girl, but my DH prefers multiple courses.  With me working half-time at home with my four month old and DH working long hours, we are really struggling with a dinner solution.

    I don't think I started really cooking again until DS was about 6 months old and started being happy by himself for longer periods of time. He went through a phase where he LOVED his jumper and I couldn't believe how much I got done, lol!
  • Let's see.  Sunday we had spaghetti squash and homemade spaghetti sauce with pork sausage and brussels sprouts.  Monday we had chicken curry over sweet potato noodles (obsessed with my spiralizer!!!)  Last night was Freebirds bc it was a disaster of a night.  For the rest of the week we have fish tacos, bacon wrapped filet, and spaghetti squash crusted ham and tomato quiche.  And either a crock pot meal (roast sure sounds good) or eating out once more this weekend.

    We usually keep it so simple in the kitchen.  Typically, we have one skillet or pot for the main dish.  We usually roast one veggie in the oven on a cookie sheet with foil and we steam one veggie in the microwave.  MH cooks, and I (usually) do the dishes.  All we usually have is our two plates and forks, plus the skillet or pot.  LO just eats right off her high chair tray, so I guess I do have to wash that too, but it's simple.

  • Tonight is a casserole of quinoa, leftover chicken, broccoli, and cheese and kale chips. Last night was cod, roasted cauliflower, and squash Mac and cheese. Monday was mashed cauliflower, roasted chicken, and biscuits I also made broccoli soup and squash and apple soup for tomorrow. Friday is leftovers

    That's good to know!  DS sits in his RnP and watches me cook, but gets pretty mad at the end.  Thanks to @CLLDLL I think I will attempt a pot roast for dinner tonight!

  • @stoneycakes It's the World Cuisine A4982799 Tri-Blade Plastic Spiral Vegetable Slicer.  It works really well, it's super easy to use, and it's actually not bad to clean.  Sweet potato noodles are my fave so far, but zucchini noodles give a more spaghetti-like feel.  It also makes a great cucumber and tomato salad.

  • We're getting our kitchen redone in 2 weeks, so I have officially started cooking dinner from whatever we have in the pantry and freezer so I have less to pack and store during the reno. A lot of it is less than healthy (like Hamburger Helper) which is why I never make it, so DH is in hog heaven. Thankfully we have a lot of frozen veggies on hand, so it's not all bad. Tonight we're having pizza. DH is working an extra shift (6 to midnight) so I have DS by myself all day. I decided pizza and a soda might just get me through. :p

  • tonight we're going out with FIL, but what I'm really excited about is this new veggie burger recipe we're having tomorrow with homemade fries. It's sitting in the fridge now to meld and smells delicious!

    usually I like to have at least 2 things to eat, but since Bram's been here, I do more casseroles, soups, one skillet dishes, etc. than I used to because they're easy. I make all the sauces, dressings, etc. from scratch usually so I tend to go through a lot of dishes. Good thing washing pots and other by hand dishes is DH's job! 
  • @Chickypoo2468 I'm hoping he will be sick of HH by the time we get through what's in the pantry. I know I sure will be. But thank you! Now if you have a fantastic meatloaf recipe (that isn't dense and brick-like) that you want to share, I am sure DH would be thrilled.

    This is what I was thinking of asking DH to do.  I don't mind loading the silverware and dishes, but handwashing the pots that won't fit is the devil's work.  I'm wondering if I can convince DH that it's a good compromise.
  • @stoneycakes Tell YH that the CD board said it is a good compromise.  And if he disagrees will will hunt him down and kick him in the shins.

  • Thanks! I hate meatloaf, but DH loves it. I am going to try to make it for him when we get our kitchen done as a "thanks for finally getting this done" dinner. lol

    I want to make toasted almonds and quinoa with dried cranberries. Haven't had the energy to make it.  It sounds amazing though

  • These days  if I'm making dinner, it's something quick and easy.  If DH is making it, he has more time and will make fairly complicated things.  I'm very lucky in that DH loves to cook.

    Monday:  Wilted spinach salad with hard boiled eggs and bacon (*mmm* bacon)
    Tuesday: Turkey "shepherd's" pie
    Wednesday: Grilled cheese and tomato soup
    Friday: Homemade pizza (Friday night is always pizza night)
    Saturday: Medley of whatever DH feels like whipping up
