Sorry for the boring post, but I'm hoping for some bites. DH does almost all of the cooking in our house, but I am trying to learn at least a few easy meals. Specifically, I am thinking about making a bunch of crock pot meals when I'm home on maternity in Feb since we'll both probably be too busy to really cook.
I already have a good recipe for French dip and one for pulled BBQ chicken. If you have a crock pot recipe you swear by, can you link or post it here?

-You take 2 bags of frozen diced green peppers and onions and put them on the bottom of the crock pot. (The last few times I've just cut up g. peppers and onion and put them in at the end).
-put 3-4 frozen chicken breasts on top of that (or on the bottom if you don't do the frozen veggies)
-I cut up a whole turkey kielbasa sausage and throw that on top of the chicken.
-1.5 cans of Ro-tel (diced tomatoes with green chillies) on top of that
-2 cups of water
-just the seasoning packet from a box of Jambalaya rice mix
I cook all of that on low for about 9 hours (that how long I'm gone during the day). When I get home from work I throw 2 cups of brown rice in there and turn it on high for about 30-45 minutes until the rice soaks most of the juice up. This is also when I throw in my peppers and onions.
I have also added shrimp to it too. It's SO good! It's a little spicy, but not bad at all. Again, my kids will eat it.
