Weekly Meal Plan Check In!!

For those of you who don't bump on the weekends, I got good feedback about posting a weekly meal plan check-in. The goal is to share meal ideas (both for adults and little ones!). Feel free to share just dinner ideas or your whole menu throughout the day.

QOTW: Would you rather do a check-in on Monday or Thursday? Mondays would make sense as it would kick-off the week of meals, but I am also thinking Thursday for those of you who want some ideas for the following week when you do your meal planning and grocery shopping. Thoughts?

    Tonight I made chicken curry over sweet potato noodles. Tomorrow I'm planning a spaghetti squash-crusted quiche. Fish tacos and bacon wrapped filet mignon round it out, but not sure on sides yet. One night we will have leftovers or go out I'm sure.

    I'm excited to see what everyone else is having!

    ETA: Reading comprehension fail. We're supposed to do breakfast and lunch too? That'll be disappointing over here. Breakfast every day is oatmeal with raisins and nuts. Lunch is always leftovers. B-o-r-i-n-g!

  • Breakfast: On Sunday night I made a huge crockpot of apple cinnamon oatmeal to eat for breakfast throughout the week. Delicious!

    Lunch: I usually have a big salad with various fixings and some sort of protein - today it was romaine, olives, feta, tomato and leftover steak.

    Snacking on: Babybel cheese, Fage yogurt, Macintosh apples and red bell pepper. YUM!

    Our dinner menu looks like this for the week-

    Monday: Chicken Breast, Green Beans and roasted Yukon Gold potatoes

    Tuesday: Steak Tips, Corn on the Cob, Rice Pilaf

    Wednesday: Making a BIG crockpot of Minestrone Soup following a new recipe!

    Thursday: Mussels Marinara and Spaghetti

    Friday: Ordering Pizza!!

    Saturday/Sunday: Eating out at a Wedding on Saturday, will probably make some chili in the crockpot on Sunday for football!

    Since I'm SAHM, I don't usually plan the entire week ahead of time.  For the time being:

    Monday: Swiss chard/spinach/mushroom & sausage pasta casserole

    Tuesday: stir-fry bok choy, cold soba noodles, and pan-fried tofu

    Wednesday: one-pan farro with tomatoes

    Thursday: leftover pasta casserole from Monday, plus celeriac soup

    Friday: Mark Bittman's simplified paella with cod

    Sat/Sun: I go to my town's farmers market to shop all my produce on Sat morning, so the weekend meals will depend on what's in season and what I end up buying.

    ETA: For breakfast, I make a batch of granola every 2 weeks.  I eat my granola with yogurt and fruit; DH eats it with milk.  For lunch, DH brown bags a chicken sandwich daily (I bake the chicken pieces for him).  I usually fix a sandwich with either HB eggs or some ham and cheese.

    Here's our menu, but I have to warn you that I am nursing twins and take care of three children by myself all day so I rarely get enough calories during the day and try to make up for it at dinner. They aren't necessarily geared towards losing weight. If anything, it's the opposite.

    Sunday - salmon, mashed potatoes, broccoli

    Monday - whole wheat pasta with sausage and pepper sauce

    Tuesday - pork chops, pasta salad, green beans

    Wednesday - homemade pizza

    Thursday - whole wheat pasta with chicken, peas, and Alfredo sauce

    Friday - Mac n cheese baked with nitrate free hot dogs and a salad

    After two Clomid cycles, three injectable IUI cycles, two IVFs, two miscarriages, and one lap surgery, IVF #2 has brought us our little boy!

    Tuesday - turkey tacos with all the fixins and black beans

    Wednesday - Caprese chicken, orzo and butternut squash (doesn't really go together but need to get rid of the squash!)

    Thursday - Homemade chicken noodle soup

    Friday - out (its our anniversary)

    Saturday - we have a wedding

  • We are so boring!! I just can't find the time to make anything with more than a few steps. The boys are going through some kind of drama and sleeping on me for about 2-3 hours/day. I can't find the time. Please, tell me your secrets! And, @PennyLane26- how awesome does that oatmeal sound? I so want to make it, but DS1 is allergic to oats =(.

    Tonight: Pork tenderloin with whole wheat stuffing and green beans

    Tuesday: Spinach linguine with marinara and meatballs

    Wednesday: Bourbon chicken with rice and snap peas

    Thursday: Grilled chicken with salad, avocado, and goat cheese

    Friday: Take out

    Saturday: Chicken and Spinach Farfalle

    Three TI cycles (BFP...miscarriage), five IUI attempts and 2.5 IVF cycles later...BFP!!
    12dp5dt: 765; 15dp5dt: 1979; 17dp5dt: 3379...TWINS!!!!!
    Our perfect baby boys were born at 36w1d!!

    It is a weird week for us. I had a mtg tonight and ate out. DH has work dinners tues & thurs. I'm lazy and ont cook if DH is gone. We also make enough food for DH to have leftovers or lunch, but he has work peeps in town and he will lunch out.

     M: me = out, DH = chicken in salad leftovers from the weekend 

    T: DH = out, me = leftovers 

    W: Crockpot frozen meal (I made a ton and froze them from the savingyoudinero.com blog) 

     T: same as tues 

     F: probably grill 

     S: alumni event 

     S: I can't think that far ahead :)

    Let me just say I"m really impressed with everyone's efforts to cook a decent meal :) This is always such a challenge in my house btwn working full time and DH's schedule.

    Skipping breakfast and lunch.... but for dinner:

    Monday - Turkey Sausage, Pasta Roni (don't judge, it's my one guilty pleasure) and salad.

    Tuesday - stuffed zuchini's with turkey burger and sausage and bulgar.

    Wednesday - Pork Chops, Cous Cous and salad

    Thursday - Prime Rib take out

    Friday - TBD

    Saturday - Dinner at my moms - whatever she puts on the menu!

  • omg - i just have to say i am extremely impressed with everyone's organization here. DH and i literally throw dinner together based on whats in the fridge and freezer (nightly). I need to get with the saif lifestyle and start planning better meals! and i'm stealing some of your ideas!

    tonight we are being boring: asian marinated salmon on the grill, black and red rice and probably just a salad. i've gotten about 5 hours of sleep within the past 2 nights so that's my excuse.

    Monday: Stuffed great peppers from a Pinterest recipe

    Tuesday: ate out with the ILs

    Wednesday: Parmesan and Italian breadcrumb coated chicken breasts with veggies (I'm from the South so this means green beans, corn, black-eyed peas, etc.)

    Thursday:tacos with skirt steak, skillet blackened corn, and lime

    Friday:We have to be out of town for dragon boat rave practice, so we'll grab a quick supper!

    Saturday/Sunday: Day of the dragon boat races Saturday so will eat what's there. Sunday we'll eat at DH's parents' for lunch.

    Breakfast we have cereal, oatmeal, or bagels. I take salads or tuna for lunch and DH has leftovers or tuna. We are so blah!!!
    MF (low motility) - Began stims for IVF#1 7/21/12
    ER 8/2/12 - 14 eggs retrieved, 12 mature and ICSI'd, 6 fertilized. ET 8/7 - 2 embies. Beta#1 8/17: 143! Beta#2 8/20: 590! Beta#3 8/22: 1,162! 1st US 9/4: one beautiful little bean with the best sounding HB I've ever heard!
