How Do You Grill?

These were the standard rules I was taught for grilling, but i would love to hear how you do it.

1) Only flip once.  Flipping too much dries the meat.
2) Do not cut the meat to see if it is done.  This one I know I ignore if it is just for my wife and I.  Basically, if the meat is sticking to the grill, it needs more time.
3) The thinner the meat, the shorter the cook time
4) Temps vs Meat
    a) Beef - High and fast.  You want to sear the meet more than cook it.....at least if you want medium rare.  For the most part, the grill lid should probably be open.
    b) Chicken/Pork - Low and Slow.  Chicken/Pork should always be cooked all the way through.  Closing the lid is acceptable here.
    c) Vegetables - I almost didn't put this one in because it was not a meat...but these should be cooked similar to chicken/pork, but make sure to cover with oil.  If your grill has a top rack, that is a good place for them.

What are your rules/tips/tricks?

Re: How Do You Grill?

  • Ok, flip a total of four times. Look at the grill as a clock with only four numbers. That's how you get those crossed grill marks. Also, don't cut the meat! Come on! That's how you get dry meat. Think of it as a muscle, because it is. When it's warm, it is tight and stressed out. When you cut it when it's right off the grill (or even on it), it squeezes the juices out of it. When it has rested, it retains its juices. Test it. Cook two large steaks and cut into one as soon as you pull it off. It will pour out liquid. Now, wait a minimum of 5 minutes before you cut into the second. Maybe a little juice will come out. That will be a much juicier steak.

  • Turn grill on. Cook to completion. Use thermometer if you have a vagina. If not, Man up and deal with the potential consequences of being a noob and not knowing how to operate a grill.

    Hahahahaha!
