These were the standard rules I was taught for grilling, but i would love to hear how you do it.
1) Only flip once. Flipping too much dries the meat.
2) Do not cut the meat to see if it is done. This one I know I ignore if it is just for my wife and I. Basically, if the meat is sticking to the grill, it needs more time.
3) The thinner the meat, the shorter the cook time
4) Temps vs Meat
a) Beef - High and fast. You want to sear the meet more than cook it.....at least if you want medium rare. For the most part, the grill lid should probably be open.
b) Chicken/Pork - Low and Slow. Chicken/Pork should always be cooked all the way through. Closing the lid is acceptable here.
c) Vegetables - I almost didn't put this one in because it was not a meat...but these should be cooked similar to chicken/pork, but make sure to cover with oil. If your grill has a top rack, that is a good place for them.
