Help me feed my ILs - dietary restrictions

Please help me feel my ILs. They are coming for dinner this weekend and they have tons of dietary restrictions. My MIL is gluten and dairy intolerant. FIL has heart trouble, so light on the salt. They also don't eat much meat (although I think FIL would enjoy some meat). What should I serve them? I am at a complete loss and frankly, don't know anything about gluten-free diets. Links get bonus points.

    I usually do a rice or potato side, a salad, and a veggie. I'd make some regular dinner rolls and have a few gluten free ones (separate dish, seperate cooking).

  • I have Celiac and I recommend that if you aren't familiar with gluten free cooking to read up on cross contamination and label reading.

    I would recommend keeping it simple like meat/potatoes or rice and veggies. For dessert I have a great recipe for GF/DF peanut butter cookies:

    1c PB
    1/2c sugar
    1 egg

    Blend and roll into 1 inch balls. Bake at 325 for 10 mins.

  • I also have celiac and agree with reading up on cross contamination.  Stick to things that are naturally gluten free: meats, veggies, fruits, potato, rice.  It's easy to make your own marinade with some lemon juice and oil and a few spices.  Herbs and spices are great because they are all gluten free (be VERY wary of prepackaged mixes, though) and they add flavor when you can't add salt.

    I like it with baked potatoes and a salad as sides.

    For dessert, something super simple like a fruit salad.  You can make chocolate sauce to go with it if you want it to be a little more decadent.

  • I would recommend some grilled fish, veggie kabobs and rice. They are all naturally gluten free. Just make your own marinade with things like olive oil, lemon juice, and fresh herbs.   • I wasn't clear in my original post... by cooking seperately, I meant being careful about cross contamination.

    My brother is extremely sensitive to gluten. If you use a cutting board for bread and then prep his food on it, he will get sick--very, very sick.

    Many grocery stores have gluten-free sections now. I bet you could find some options there if they're going to be there for multiple meals. I'd also ask their advice about what they like to have on hand.

    Does your MIL have dairy sensitivity to all dairy? A friend can't even stand dairy in baked goods, though most are only sensitive to milk, cream, cheese, and so on.

  • We have friends with these restrictions, except they also don't eat meat - try cooking for that crowd! With your ILs, I would do salmon, wild rice, seasonal veggies (roasted broccoli and cauliflower is simple and delicious). For dessert I would do angel food cake (assuming they are ok w/ eggs; look online for gluten free recipes - tons of them that substitute different types of flour for the regular wheat flour) with fruit and sorbet. 
  • If you bake anything, please scrub and sanitize your mixer. Also, watch small things like using butter that you've contaminated with gluten by making toast, etc.
