Tonight is lamb and spinach enchiladas with leftover lamb from the weekend.
The rest of the week consists of dragging frozen meat out of the freezer and throwing it on the grill. Combined with a grain of some sort and whatever comes out of the garden.
Friday we leave for a long weekend in VT, so we'll likely pick up food on the road.

Fri: salsa crockpot chicken
Sat: DS's birthday party!!

Step one: roast spaghetti squash (for a 3lb squash cut in half - 25min at 375)
Step two: Lemon juice, garlic to taste, basil and two avocados in a food processor. Blend.
Step three: Scrape squash, plate squash, dish sauce on top with some fresh ground pepper and eat the shit out of this delicious meal.
I have no further meals planned this week. Probably salmon and quinoa, chicken of some sort, pita pizzas, tacos..
