So, I love potato soup. I totally think that you need to post your recipe. I like trying different ones out and haven't gotten a new one since last year.
Oh, and did you know that you can do potatoes in the apple corer/peeler/slicer thing? I can't figure out how to not get it to core, but I just chop up the cored part into little pieces and I'm good to go. Sooooo fast and so mcuh easier!

I don't really HAVE a recipe for it!!! Crazy, I know!
I pretty much just do this:
Peel and cube 5 lbs potatoes - boil till you can pierce cubes easily w/ a fork
In a big ol' crockpot put in the following "things":
-Chicken stock or broth - just enough for a base. I use 1 small carton of chicken stock.
-Cooked potatoes
-Chopped carrots - to whatever size you like in your soup. I go a little smaller than chunks but not too fine
-Chopped Onion
-A tablespoon or two of minced garlic
-Cubed ham - again, you can do chunks. I go for small-ish chunks
-Velveeta cheese - I always use the 2% milk kind and use anywhere from 3/4 to a whole "big" block of it. Just depends on how much cheese flavor I'm feeling. ***I will ONLY use Velveeta. I've attempted to make it with other cheese and it suuuuuucked.
Let all this get nice and hot in the crock pot - Approx. 1 hour before serving the soup I put in:
Either of the following, depending on what I have on hand, a mixture.
-Sour cream (**I typically use this because it creates a thicker soup)
-Half and half
-Milk - I always pour in a bit to fill the crock all the way up and thin it out a bit because the sour cream will really thicken it up.
Salt and pepper to taste and ENJOY!
