I spoke with a lactation consultant today about milk testing. Turns out such a thing DOES in fact exist and I'll be going in to do it.
There are 3 types of tests and their costs vary. They all test for fat and caloric value within breast milk.
1. Test 5mL of milk pumped out (~$50)
2. Pump for 2min, feed baby for 2, pump again, feed again, pump again. This test the start/middle and end milk (~$200)
3. Come in for milk tests every 6 hours. This will test milk throughout the day. (~$300)
Just an FYI for anyone who might find this useful down the road.

Proper amount of calories and fat in milk/formula are important for baby's health and growth. If milk is not "fatty" enough, or doesn't contain enough calories, then baby doesn't gain enough weight and that's not good.
