I freeze them in the peel. Then I just cut off pieces as I need them.

I guess it all depends on when you've got more time. I usually throw the bananas in the freezer when I'm cooking or straightening up the kitchen and worry about them later. But if you're always in a rush at DC's mealtime then peeling and cutting ahead of time would be more convenient.
I don't think any ripening should happen either way. If you do freeze them in the peels, just be warned that the peels will turn black. The banana inside will be fine.

will one way ripen them faster? or do bananas keep when frozen like most other things?
