My neighbor made a cake mix cookie this week. She used chocolate but when I go to the store I plan to get red velvet. She took the cake mix, dumped it in a bowl, used a hand mixer and blended in an 8 oz tub of cool whip. That's it - two ingredients the cake mix and the cool whip. Use a melon baller or something to scoop onto the cookie sheet and bake about 8 minutes at 350 or so until the tops crack. She made it with the chocolate cake and it was awesome! Light, moist and fluffy.

OMG. ?Yummy! ?I just bought a box of red velvet cake mix on a whim at the grocery store with no plans of what to do with it. ?Now I know! ?I will try this recipe. ?And, since we're both pg, we can justify eating at least 6 or 7, right?
