I make something very similar to this, with more curry powder and less mayo. I put the rice in the bottom mixed with another can of cream of chicken. I use bread crumbs instead of croutons, and mix them with some butter to top the cheese. I let it cool in the fridge and then cut it into single servings and freeze them in a freezer bag. Each serving comes out to about 500 calories, so it is a good meal and very tasty.
There's a great book called "don't panic, dinner's in the freezer" It has some really awesome/easy recipes. Everything from breakfast to dinner to dessert.
Last year I froze a bunch of things for when the baby came (born in january). The things that froze the best were....
ham and cheese quiches, fully cooked. Foil lined cassarole dish, cook, then pop foil out from dish and wrap and freeze. Then you can put it back into the same dish when it's time to thaw and warm/serve.
Chili. I made a triple batch of it in the crock pot. We ate 1/3 right away. And froze the other 2 each in two 1-gallon ziplock bags.
A couple of cakes. Cut into three big pieces and freeze, so I could pull it out a little at a time. It was nice to have something sweet on hand, too.
Rustic Grilled Cheese - whole grain bread, honey mustard, thin sliced tomatoes, cheddar cheese, and a few slices of deli chicken. Put it all together, butter the bread, then wrap in foil. I could pull one out and put it in the fridge in the morning to thaw. Then at lunch time, I could heat it up in the skillet really fast, and have a nice, filling sandwich quickly and easily. DH thought that was stupid thing to freeze when I did it, but it was actually one of the best things I did.
Calzones - I used the french bread crust from pillsbury and made several different kinds. Uncooked, wrapped in foil. Thaw in fridge and then cook in oven. Came out perfect. Good for DH to have something fast for him too.
I had a few recipes for shredded chicken fillings but I never got around to it. Using shredded chicken to mix with different things and freeze in ziplock bags. Then thaw and use to fill torillas, etc.
