What should I do with my acorn squash?

I have two super pretty ones that are just begging to be eaten.  Suggestions?

  • All of the above or peel, sautee with butter and onions and then boil mixture and puree to make soup! ?delicious.
  • cook in oven...freeze in chunks...feed to baby

    This, but I also add crushed garlic and olive oil when I bake them.

  • I halve them, poke the meat with a fork, butter and brown sugar them (a little salt too), and then bake. Mmmm, i'm jealous now...I want to be at your house eating acorn squash!
  • Make a stuffing of lentils and rice or bulger wheat.  You can add in some sausage if you want.  Sage and garlic are a must.  If you want you can add a little chopped apple or dried cranberry for contrast.
