I have a REALLY yummy recipe too for a chicken casserole and it's SUPER easy.
4-5 bonless chicken breasts - cubed (not cooked)
1 can of cream of mushroom soup
1 can cream of celery
1 can cream of chicken
1/2 C milk
combine all and put in a 9x13 pan. prepare 2 boxes of stove top stuffing, but do not cook. put stuffing over the rest of the ingred. cover with foil and bake 1 hour. uncover and bake about 15-20 minutes or until browned. OH SO YUMMY!!!!!!! we usually make egg noodles or mashed potatoes and top with the casserole.

Okay, you will need:
1 can cream of mushroom
1 can cream of chicken
1 8oz tub of sour cream
2 sticks butter
1 box of Ritz crackers (with the 4 long wrappers of crackers)
4-5 boneless skinless chicken breasts, diced.
Directions:
1. Preheat oven to 350*. Combine soups with sour cream and chicken breasts. Stir in large bowl.
2. Melt 1 stick of butter in separate bowl. Take half of the Ritz crackers and smush them into little pieces...the smaller the better! Add the butter to the crackers and mix. Take your casserole dish and line the bottom of the dish with the cracker/butter mix. Looks kind of like a pie crust.
3. Pour soup mixture from #1 over crackers in casserole dish and spread evenly.
4. Repeat step #2 and add to the top of the casserole dish.
5. Place in oven for 1-2 hours or when chicken is thoroughly cooked.
