DH is a Type 2 diabetic. He likes to eat celery sticks dipped in hummus (he likes the Costco hummus best). He keeps a box of Glucerna bars with him at work for a quick snack, and also the Glucerna milkshake things. He likes the Healthy Choice fudgesicle-type bars, too, for dessert.

south beach diet snacks are great for diabetics - low fat string cheese, celery with peanut butter or hummus, cottage cheese with diced tomatoes or cucumbers, sliced cheddar, a hard boiled egg - i'd just steer clear of the "sugar free" processed foods since it's all made with some sort of chemical substitute... my pamphlet from Stanford says to absolutely not consume any splenda since it hasn't been studied...
It sounds weird but I am currently addicted to "Egg Beaters" - fat free, cholesterol free egg in a carton. I am planning on making myself a snack in just a minute. I like them with sauted bell peppers and onions. I'll add drained black beans to the onion mix and throw some hot sauce over the whole thing. Umm
