Struggling with lunches

So I started a new job and am traveling all the time now.  I don’t have access to a fridge or a microwave and I’m SO over pbj… I used to always just take dinner leftovers (since had fridge n microwave were available), and I’m in a rut.   I am where it could be 60s to 80s daily so don’t like even salad as option sitting in car.  Without a deli sandwiches as a choice, I’m struggling with ideas?  Any non fridge/microwave needed meals suggestions would be lovely.

    You could do meatless deli sandwiches! Cream cheese and veg, pesto and cheese, hummus... If you're ok with some weekend meal prep, you could make breakfast muffins. I'd also invest in a cooler or insulated lunch box, that way you could bring salads as well. And cold pasta dishes.

    A lot of companies do flat ice packs now that you can stick in the bottom of your lunch bag to keep items cold. 
    Pasta salad is a favourite in my house as well the items @etnyah mentioned above but I've always been a grazer type eater. Canned tuna (the sundried tomato) with some crackers, cottage cheese with avocado, even some 'lazy' bowl items that taste good cold like tacos (add lettuce and it's a salad haha), cabbage rolls. 
    I'm probably the wrong person to ask though because I like cold food better that hot usually anyway. 
  • Adding that thermoses, especially the yeti brand keep things hot for a LONG time. So you could do some soups (minestrone, tomato, whatever!). Add a side of crusty bread and you’re good to go.

  • If I'm strapped for time (and who are we kidding, that's always....) I grab a rotisserie chicken before my week starts and tear that up and pour a little pickle juice on it to keep it moist. Then I make sandwiches out of that in the morning. (cheese, pickle, peppers, spinach). Or wraps are good too. 
    I also make a chia pudding and eat that over several days with fresh berries (1 1/2 cup almond breeze and 1/2 cup chia seeds and some honey) 
    And pre portioned sacks or containers of cut up veggies, granola bars, etc. 
    I tend to pack a lot of stuff because I'm on a remote island for 8hrs and panic that I'm going to be hungry. (some days I'm absolutely ravenous!)

    Yes rotisserie chickens are very popular in my house because it's easy to put them in so many wraps or pinwheels: chicken ceasar wraps,  cream cheese and cucumber. pinterest has a lot of pinwheel ideas!
  • And if you're so inclined, you can make stock out of all the bones! (and a few veggie scraps if you want)
