S/O cozy winter meals - recipe thread

The cozy winter meals in this weeks check in have me seriously drooling over here. If you have a few minutes, please share your recipe(s) or drop a link to them here! I’m always looking for new ideas and imagine I’m not the only one. 😊

  • Here’s the link to the meatloaf recipe I like to make. Even my 4 year old likes it (and requests extra ketchup). I add a little more ketchup than soy sauce for the sauce to adjust the taste slightly sweeter.

  • Love this thread idea! I don't have links so will post each recipe in spoilers

    Salsa Verde Chicken (crockpot)
    ~1 lb chicken (can use chicken breast or thighs, I use anywhere from 1-2 lbs chicken)
    Jar of salsa verde
    Onion (I usually do a yellow or sweet onion)
    Bell pepper (I typically use 1 green bell pepper but use whatever and as many as you want!)

    Put chicken in crockpot. Slice onion and bell pepper, place in crockpot. Pour in jar of salsa verde and cook on low 6-8 hrs or high 4-6 hours.
    Shred chicken, then serve burrito bowl style with your choice of add-ins/toppings.

    I usually serve over rice, with black beans, corn, avocado, shredded cheese, sour cream and a lime wedge.

    Avgolemono soup (Greek lemon soup)

    8 c. Chicken broth
    4 eggs, separated
    1 c. Rice
    3/4 c. Lemon juice

    Bring chicken broth to a boil.
    Add rice and simmer 20 mins.
    In a bowl, beat egg whites until stiff.  Add yolks and beat well. Slowly add in lemon juice while still beating eggs continuously.
    Add 2 cups of the hot broth to the bowl of eggs/lemon juice---make sure you are continuously beating the egg mixture to prevent eggs from curdling. **an immersion blender works great for this**
    When eggs and broth are well mixed, pour back into the pot with the rest of the soup. Stir well over heat (but do not allow to boil). Serve at once

    **can add chicken and other veggies to this to make it heartier. I love it plain like this, it was always my sick day soup my mom would make when I was a kid 😆
    **DH likes to add hot sauce to his, I like to add extra lemon juice to mine to make it extra sour

  • I don't really have a recipe for my chili but this is what goes into the crockpot:

    2 cans diced tomatoes
    2 cans kidney beans 
    2 cans black beans
    1 small bag frozen corn
    1 small bag frozen peppers and onions
    1 jar salsa
    1 bag frozen ground meat substitute 
    Chili powder
    Cumin
    Onion powder
    Garlic powder
    Italian seasoning
    Apple cider vinegar
    Sometimes I add pumpkin puree, nutmeg, beer, or whatever I'm feeling at the moment.

    I also add frozen gnocchi to it! It's kind of like chicken and dumplings.
