I’m sick this week so basically nada. Everyone fends for themselves.
But I did find these delicious cauliflower gnocchi at target and last time I made them I added spinach at the end and added sliced pre-cooked Italian chicken sausage too, and it’s pretty good and relatively healthy.
And before I got sick, this past weekend, I made spaghetti with butternut squash sauce instead of tomato sauce, and ground chicken instead of beef since I’m trying to cut way down on red meat, and I gotta say the butternut squash sauce is way kinder to my acid reflux and is delicious.
This week is all comfort food vibes because, well, cravings! I've got a big pot of veggie lasagna planned - it's super easy to throw together and lasts a couple of days. Also doing a slow cooker chicken taco soup, which is basically toss everything in and forget about it till dinner time. Trying to keep things simple but nutritious.
