I finished using up all of our pumpkins from last year’s garden. So much pumpkin bread and so many pumpkin muffins… Unfortunately, they won’t last long. My husband had events at work to take pumpkin bread to…and 7 kids devour pumpkin muffins as fast as I’ll let them (or they can sneak, in some cases).
I have so many butternut squash still…I need to explore different ways of using them…I bet I can give the kids more sweet bread/muffins with them. My favorite is a creamy soup, but the rest of my family doesn’t like it too often. 😉
@amydawn09 butternut squash bakes up just about like pumpkin, so you can totally make bread/muffins with it! If you wanted something a little more savory, our family loves the Yummy Toddler Food zucchini slice or baked zucchini fritters, except I swap in shredded butternut squash when zucchini is out of season and looks pretty sad. It works great and is a fun way to get an extra serving of veggies in at breakfast! I also like to shred a couple squashes at a time (in the food processor if I have it out, or just on a box grater if I need an arm workout) and flash freeze them spread out on cookie sheets, and then store the frozen shreds in a freezer bag so I have them ready to use any time.
We found out the gender and I made gender reveal cupcakes for us to share. They’re banana cupcakes with cinnamon cream cheese frosting. So yummy! And adding the blue frosting was so easy.
I don’t have any pictures but I went and got some fabric to start some baby blankets for the new baby. I will probably make a bunch of crib sheets for him too.
@emeraldcity603 have you ever seen QuickZip sheets? We have a set for my daughter with a spare top sheet and I am obsessed with them. They're the greatest thing in the world for middle of the night but holy toledo they're pricey. If you could make those as a knockoff, you could make a dang mint.
@ki1244 I have never heard of those. I’ll have to take a look. Regular sheets are the easiest thing to make. I like making my own because they hold up better plus I can pick the fabric.
I made pizza yesterday! I have not cooked anything substantial in weeks due to not wanting to eat and being too tired. Feels good to cook something normal again!
Tonight DS and I made the Levain chocolate chip cookie recipe! They’re HUGE and tasty but honestly it’s too much cookie even for my insatiable second trimester appetite
I made brownies and left them a little too long in the oven where my OXO spatula I had for 9 years snapped in half. I was like omfg what just happened 🤣
