@ki1244 I also have plans for butternut squash soup this week! Probably tonight. I have to work late on Wednesday, so the rest of the family is on their own then. Other ideas I have are escaping my memory at the moment lol
@tumbleweed-1 don't know if you have an Aldi near you but squash is on a big sale this week. I'm stocking up for SURE -- it's my husband's favorite soup and I absolutely don't mind that it's a "dump in the slow cooker and be on my way" thing. What recipe do you usually use? I came across a Betty Crocker one years ago that I tweak a bit but it adds cream cheese at the end and it's SO FLIPPING GOOD.
@ki1244 I’ve only made the soup once before, but it’s butternut squash and apple. Literally just those two things plus sautéed onion then cover with broth or water to cook, blend, and season. Looks like we don’t have Aldi in Oregon. I also love to make dinners that are throw it in a pot and call it soup lol
@justyouraveragemama did you grow the tomatoes too? I’m interested in canning, but haven’t ever tried it yet. My (small/fridge top) freezer is almost 1/4 full of blackberries I picked all summer that probably would have been better stored if I’d canned them somehow.
@tumbleweed-1 yes I grew the tomatoes! We’ll, half of them. My sister and I both do decent sized gardens and then we combine our harvests and can together! I highly recommend it, we don’t have much freezer space either but it’s also reassuring that if we lost power or something that we won’t lose all the food we grew in the summer.
I haven’t grown blackberries but most people turn a good chunk of their berries into jam or pie filling!
I had Chick-fil-A today. Tomorrow I’m making hot ham and cheese sliders with a veggie side. Wednesday will be leftovers and after that don’t ask LoL. I had a roast planned but I let my husband do that and it failed or I would have had a couple of nights of beef roast. Oh I can make tacos this week too! Whenever I am hungry I just want tacos 🌮
Tomorrow im doing a pork loin with some rice and peppers and onions.
Wednesday has gotta be a pressure cooker or slow cooker meal cuz I'm in back to back meetings from 10-1 and then I have to drive to Philly for my US. Plus restaurant deliveries on top of that in completely opposite directions cuz my one Thursday restaurants is reopening on Wednesday after a two week break and needs greens. Ugh idk.
I can't decide between chicken piccata or red sauce and meatballs.
Maybe some loaded tots on Friday. We haven't done that in a while.
I did white chicken chili on Sunday and we'll probably have that twice this week. I made hunan beef and peppers with rice last night which we'll also have again. Thursday night I have a dinner out with some friends to celebrate a birthday so I'll probably order Chipotle or Cava for my H and daughter.
I don’t know what hunan beef is but it reminded me of how much I’m craving beijing beef from Panda Express…well actually all Chinese food if I’m being honest
