Meal prepping

Anyone planning to prep some freezer meals? I was thinking over the next month I'd prep a bigger batch of a dinner for the week and freeze the other portion for after baby. Some ideas I had: shepherd's pie, baked ziti, crockpot beef vegetable soup, crockpot curry chicken soup, browned ground beef for quick tacos or sloppy joe (my husband makes a good homemade sauce). We have a 4.5 yr old so I want to make sure he isn't eating all garbage right after baby arrives.

     For those of you who have done the meal prep for postpartum before, is it better to freeze and reheat already cooked meals or to freeze prepped ingredients to cook? 🤔
  • I did this with my first and it was the best thing I could have done, so I’m doing it this time as well. My in-laws brought us a ton of food the first time but it was never anything that I wanted or could eat while breastfeeding (I live in south LA where everything is spicy and greasy). I was obsessed with soups after I had him so those are the first things on my list. Casseroles are also nice especially for my husband and son to have. I like having the meals ready to either throw in the oven or a pot and warm up. So far I’ve doubled my recipes when cooking meals I know I’ll enjoy postpartum so it’s not overwhelming. I have potato soup and jambalaya already done. The next few weeks I’m planning on making different stews, gumbos, gravys, and pastas that I already know we love. I love Ree Drummond and she has a lot of great casserole dishes that can easily be frozen in an aluminum pan (cleanup is much easier after). The easier the better, especially the first month postpartum. 
  • I was just working out the budget to make room for this next month. I plan on using the crockpot for a lot of it but y'all ideas for casseroles in tin pans sounds great as well. I never thought to brown ground beef before, but that sounds good as well. Would it be easier to use gallon bags to dump it all in? I don't have extra freezer space. . .
  • I just watch a Six Sisters video on YouTube and the woman was meal prepping crock pot or one pan meals for after she had her baby. Definitely worth a watch! They were so easy and mostly crock pot meals you would just need to add one or two things to. I’m going to try to get some of them done next month!
  • I love Alex Snodgrass/The Defined Dish and she has a bunch of freezer meal lists on her Instagram and on her blog! I’m planning to make a bunch of them the next few weekends. Her stuff is healthy and uses a lot of veggies/whole grains so I’m looking forward to having those on hand
  • We just smoked a turkey breast yesterday. Shredded the meat and portioned them out to freeze in single meal portions. Today I used the crockpot and made broth from the carcass and then some turkey noodle soup for dinner. Placed two meals worth in a freezer bag and am freezing flat. The goal is to make a little extra with every meal for the next month to have a good stash for when the little one comes!
