Re: Meal Plan Monday 2/1

  • I have been reading a book about healthy eating in pregnancy, and while I’m not totally sold yet on everything they recommend (I don’t plan on eating organ meats...) I do like the idea of trying to eat “real” foods rather than processed food, so that is my main goal for now. 

    Meals I have prepped for this week: 
    - I chopped everything for lunch salads for work (yellow bell peppers, red onion, baked salmon, and goat cheese) 
    - I have everything ready to make cauliflower fried rice later this week
    - I chopped and prepared delicata squash to roast
    - Made a pot roast so we will have leftovers for this

  • @fitzfizz your meal plan sounds awesome! I just started some oven roasted tomatoes for a pasta dinner tonight... and DH pointed out that we have two leftovers pastas in the fridge. So apparently my meal plan is: pasta.

  • @Kabazaba baaahaha that is my life meal plan. All the pasta. 😂😂

    @fitzfizz i love cauliflower rice! My freezer is filled with the big bags of the premade steamable caulirice because I’m too lazy to make it myself 

    This week we’re having:

    Chicken Tacos
    Instant Pot Caprese Chicken
    Garlic Shrimp Pasta
    Burger bowls with special sauce
    Spaghetti with meat sauce
    Grilled Italian Chicken with roasted veggies

  • @caseehendrix My daughter showed me the pasta dish and wants to make it. Can we even eat Feta being pregnant? I’m so confused. She doesn’t know I’m pregnant yet so I’m stalling making it.
  • @stephaniewagner I think feta is usually a no because it’s often unpasteurized... if you’re able to confirm it’s made with pasteurized ingredients then you could eat it!
