I have been very into simplistic meals lately!! Hot ham and cheese sandwiches with fruit and chips, mac and cheese, apples and peanut butter, Daily Harvest smoothies to help with my fruit/veggie intake, frozen pizza, spaghetti & meatballs, etc.
It's not takeout, but it sure isn't anything glamorous! Simple and fast and not a significant amount of cook time 😬
This week we made homemade alfredo sauce and tortellini... before this pregnancy we didn't have many carbs in our life but thats out the window it seems. Excited for Wednesday since no school here means getting to order in lunch!
I think my aversions are starting to fade, too!! I want to get more meat protein and veggies into my diet so I’m not 100% carb like I have been the past 3 months, so working that in below.
Prepared Meals
- soup (corn chowder or quinoa/butternut squash chili) and green salad
- Mac & cheese
- pierogies
- frozen spinach artichoke pizza
Potentially cooking
*butternut squash pasta
*sautéed veggies & rice (brocc/mush)
Lunches/Solo dinners for me (hubby works nights)
- turkey burgers (prepared)
- avocado toast
- meatloaf (prepared) & roasted veggies/green beans << very excited to welcome meatloaf back to the rotation
Today I got carried away so hopefully l'll do something easy for supper.
Monday Breakfast - Dan bing (best egg pancake ever) and fruit Lunch - Homemade gyoza (potstickers) and celery/carrot stirfry. Supper - No idea, maybe finish the gyoza filling as meatballs with rice and squash. Or put the filling in extra perogy dough.
Getting break from cooking and meal planning this week as I am in recovery from my cerclage. I did stock up the freezer last week so my fiancé has things to work with though. My MIL also made us pasticcio (greek lasagna) and my mom is on her way and I have to assume she'll be bringing me something too.

So I ordered meatloaf for dinner to be delivered. With onion rings for good measure.
