Meal plan Monday 11-2-20

What’s cookin’ this week?

Re: Meal plan Monday 11-2-20

  • Su: Swedish meatballs, egg noodles, garlic roasted carrots
    M: chicken parm, spaghetti, salad
    Tu-F: no flipping clue 🤷‍♀️
Sa: turkey, stuffing, mashed potatoes, peas (I have a turkey in the deep freezer that I need to get out to make room for the new one I’ll be getting).

  • No plan... currently enroute to the ILs, then Tennessee for the weekend. And then west starting Monday.
  • So here's my plan from before I failed the 1hr glucose screening on Tuesday ...  :p I'm trying to figure out if I can portion control myself through the same recipes to meet the prescribed diet for the 3 days before the 3hr test or if I need to go get new groceries for different recipes.

M: leftovers from last week (rotini & meatballs)
T: Shredded Beef Enchiladas with Ancho Chile Sauce
W: Baked Chicken Gnocchi with Garlic Asiago Cream Sauce
    Th: leftovers
F: Slow Cooker Basil Chicken in Coconut Curry Sauce
    Sa: leftovers
  • I've apparently missed all these meal prep check ins! Super slacker here! I'm excited for next weeks post now. Time to go back through the other ones as well as pintrest to plan next weeks.  This past week we did have beef and noodles, tacos, maple garlic chicken, enchiladas and then last night was leftovers. Friday nights we usually order something and since my Jeeps starter went out on me and hubby is working late, pizza delivery it is.

  • I'm starting freezer meals this week for postpartum. We did the same thing last year for our besties that just had babies. I do easy meals all week for dinner and do freezer meals at the same time.

M: pork loin, roasted potatoes and arugula salad for dinner and Shepard's pie to freeze
T: chicken tacos for dinner and chicken pot pie to freeze
W: steak, brussel sprouts and roasted butternut squash for dinner and butternut squash and black bean enchiladas to freeze
Th: breakfast for dinner and breakfast sandwiches to freeze
    Fr: takeoutttttt
Sa: pasta e fagioli (I'll make a big batch to freeze and eat for lunch next week.)

  • @tamalahoops Post partum freezer meals are on my to-do list for this month. Likely a giant cook off over the 4 day Thanksgiving weekend. Just need to make a list of what I want so I can shop for whatever I’m missing between now and then.

  • @tamalahoops want to share the pasta e fagioli recipe and the one for the butternut squash/black bean enchiladas?? Please.
  • @mdfarmchick Just put them in the freezer meal thread! the link I shared for the enchiladas is very similar to what I do. I just use cotija cheese.
