Just made an amazing caprese salad and fideos (Mexican noodle soup).
Monday - Pozole (already made this weekend! I was a busy bee!) itâs a traditional Mexican Stew with pork and hominy, topped with lots of fresh cabbage, radish, lemon, onion, and cilantro.
Tuesday - Taco Tuesday, because it is our go-to meal.
Wednesday - Salad, spaghetti with meatballs (Eldest DDâs bday, she loves pasta!)
Thursday - Salmon, Brussel sprouts, rice.
Friday - Teriyaki chicken wings and stir fried veggie rice.Â
Ordering prepared food for next week, it arrives on Saturday, so we will eat it during the weekend too!Â

I will have to look up fidellosâsoup is my favorite! This weekend I made a huge pot of butternut squash soup that weâll eat this week. Itâs so comforting and light and healthy (just vegetables and broth and spices). Maybe too healthy...making up for it with our bowl of Halloween candy This will definitely be on my list of soups to make in advance and freeze right before baby arrives. Itâs Giadaâs recipe on the food network if youâre interested, and I doubled it.Â
I also made a couple loaves of bread to go with it and Iâm very happy with how they turned out. Bread making is one of my new favorite activities! DH bday on Friday so he still has to tell me if weâre cooking or getting take out. Iâll bake him a cake or pie or tart, too.Â
Last night I made baked mac and cheese. No idea what I'm doing the rest of the week, I really need to get back into menu planning, I was just starting to get my energy back, and then the clock change, so maybe soon. I do have a bag of chicken wings in my freezer I'd like to use this week, so if anyone has great wing recipes they'd like to share, I'd appreciate it. Bonus if it's a crockpot recipe.
Made a pot full of chili for this week, one pot meals for the win. We try to pick one or two meals to cook Sunday for the week but recently by Wednesday they all sound blah to me.Â
My husband panics if I meal prep. However if it's in the freezer it doesn't bother him. So I need to figure out how to meal plan a great meal prep, so I can freeze it. One idea I really like is pouring in a marinade when you divide meat before you freeze it in portions. So I think next time we go on on our bulk meat trip I'll make a couple of marinades the night before and then I don't have to stress out while we divide it and when it's thawing it will marinate beautifully. I also don't meal plan. I wake up,dream up what I want for breakfast making sure its different from the day before and them make a quick survey of the freezer and fridge to use up what needs go first and make a plan for the day.Â
I took a roast out of the freezer in an attempt to do a âMississippi roastâ on Weds. itâs the easiest most delicious thing in the crockpot. Heat up some bob Evans mashed potatoes and it doesnât get any easier! Just hoping I want to eat it lol.Â
Chuck roast 1 packet dry ranch 1 packet au jus 1 stick of butter 5-6 pepperoncinis
Sprinkle dry packets on roast, too with butter and place the pepperoncinis around it. Low for 8 hours. Seriously so yummy!Â
I also absolutely need to make âpickle dipâ because Iâm craving it. Itâs the best and easiest chip dip ever.Â
We had curried pork chops with squash last night Tonight we'll have roast pork with potatoes. So yesterday I did leftover squash lentil curry, because I made lentil squash cookies on Saturday for my toddler. Turns out I made too much and had an amazing sauce. My sister in law wanted to add potatoes so I got in a samosa mode today. I added boiled potatoes and a can of mixed veggies and made baked samosas with mango and passionfruit chutney.Â
There was too much samosa filling so we'll have open samosa pot pies for supper. I love easy meals.Â
Wednesday: Arroz con pollo, (one pot rice, chicken and mixed veggies)Â Thursday: baked chicken breast with lentils and white rice.Â
