Meal Plan Monday

What is everyone eating this week?  I am trying to get more veggies in.  We will see what happens.

  • Turkey chili, a chicken and rice dish and tuna melts are our plans for this week.  I also have plans to make chicken tortilla soup soon - maybe next week.

  • I'm a big fan of stir frys to get veggies in or use up miscellaneous ingredients!

    I’ve been super busy with work so this is making it impossible for me to spend and time cooking 😢

  • @autumn87654321. No judgement here.  Our fridge/freezer was down for two weeks and we finally got it back up. Meals over here have been a lot of take-out and a lot of sandwiches!!  Sometimes you just gotta do what you gotta do!
  • @dobiemom11 sounds expensive but also maybe a blessing to not have to prepare food for a while 

    I actually just bought another freezer it’s like a mini fridge but all freezer that we can put under a counter top.   Hopefully I’ll have time eventually to cook stock up on healthy freezer food.
  • No clue what we're eating this week, but I was up half the night with bad acid reflux, so I was super tired during work and ended up just looking up freezer meals to make before baby comes 😂 not productive at work at all, but I feel like I have a good list of stuff to make in a few weeks!
  • @flip25. Care to share any?  I am looking for some as well. Also I hear you on the acid reflux!  This baby is going to have so much hair.  Hope you get some sleep and relief soon.  
  • @dobiemom11 I've never actually made freezer meals, so I was mostly taking the things we cook regularly and researching how to freeze/reheat them so that I have instructions I can put with each thing in the freezer. We do a baked spaghetti and a copycat version of Buca di Beppo's spicy chicken rigatoni which seem easy to just cook now and reheat in the oven. I think I'll also do stuffed peppers and crockpot chicken tacos (just chicken, salsa, and taco seasoning, super easy).

    We make this lemon parmesan chicken (the recipe calls for veggies to be cooked at the same time on the same pan, but we usually just make the chicken and make veggies separately in the steamer or whatever) but it's the best chicken I've ever made, so I'm really hoping I'll have luck making these and freezing them and then throwing them back in the oven (or the air fryer!) https://cafedelites.com/sheet-pan-lemon-parmesan-garlic-chicken-veggies-milanese/
  • What types of containers do you all  plan to store your freezer meals in? 
    I’m thinking I’d like to portion them out for 1 or 2 servings each container ( for DH and I, or individual to take to work). But what to put them in? 
    I usually get sandwich meat that comes in those Tupperware  type containers. But I don’t wan to stick those in the microwave. I got come glass ones from ikea but they take up so much space (even with my extra new upright mini freezer). 
     Could I freeze them in the containers. Pop them out and then put them in a zip lock to store?

    In my instant pot, I’m  thinking of making a pot roast, and some lentil and squash curry with rice. 
  • I normally store casserole type dishes in the disposable aluminum foil trays that you can find near the storage containers and saran wrap at the grocery store.  They come in all different sizes (individual to family to potluck).  I both love and hate that they are disposable (less dishes, but more waste).  I cover it with Saran Wrap and foil on top and then stick it in a plastic bag.  Then I just pull the Saran Wrap off before I cook it.  Most of the recipes I make require foil on top for baking. 

    We also have a vacuum sealer, but I really struggle to use it.  I have found that it keeps meat a lot longer though.  Just a job for DH.  
  • You ladies are inspirational! I'm always trying and failing to plan meals and going by the seat of my pants somehow when I get home...not working so great. At least my hubby takes turns and is a good cook...
