GTKY: I'm an ambivert so I have qualities of both, but definitely identify as more introverted. No one who knows me (who's not also an introvert themselves) understands this because I'm very high energy when I'm with people I'm close to and I'm in a very public role at work. But I need a ton of downtime/alone time to recharge - being around people esp. large groups of people totally drains me. People equate introversion with shyness but they're not the same thing (and I'm not shy, if you can't tell.) Anyways, great read on this is a book called Quiet.
Meal ideas - there are a ton here, hoping I make it through half and have half for next week cause I got a lot of shelf-stable/frozen elements. Bringing in non-animal protein sources since I'm coming down from my carb-only fest.
zucchini casserole - simple dish my grandma used to make that's essentially sauteed zuchhini/onions mixed with mozzarella cheese and baked for 30 min.
frozen spinach raviolis
quinoa (+ choose your adventure from Brussels, kale, pesto, feta, walnuts, shallots) - the trick for me this week is using pre-cooked quinoa so I can just dump everything in a pan and sautée
tortilla espagnola - got some bags of baby potatoes. I can cheat by steaming some for 5 min. in the microwave then finishing in the pan with the eggs until set. This may be aspirational, but it sounds tasty so hopefully I make it.
tofu & greens - the idea of tofu doesn't offend me this week, so gonna get my husband to cook us some tofu and bok choy or tofu and leeks/mushrooms. My husband cooking for me is not a thing, but I convinced him to share his lunch (this) with me last week so I'll keep building up his confidence here haha.
Cacio e pepe - also aspirational but I got this badass new pepper grinder and it's the easiest pasta dish on earth
cream of spinach OR cheddar potato soups made in the vitamix blender - got ingredients for both and wondering if I can stand long enough to just throw cooked ingredients in a blender lol.
Austin style breakfast tacos - to use some of those baby potatoes, with shredded cheddar and a scrambled egg
“chorizo” tacos - my husband is a pescatarian so he doesn't eat meat. I found this vegan chorizo he likes, so gonna see if he wants to make us some tacos to use up the rest of the tortillas from the breakfast taco plan.
Backups/treats: Smoothies with bananas or berries and almond/oat milk. Pre-made spinach and goat cheese quiche. Blueberry breakfast bars (Nutrigrain style). Mini Butterfingers. Chicken in a Biskit crackers
Reporting back on last week: I didn't even cook the lazy meal kit I got, probably because it involved breaking up and cooking sausage and I just did not want to do that. Lesson learned...no animals on the menu this week.
@ec1212 also both intro and extrovert here, your description sounded just like me! Not shy, can take charge of groups, but need lots of down time and/or alone time. I would prefer alone time but it’s hard to come by with 3 kids and a husband, plus the other 2 kids I take care of! Lol
Monday - Pad thai with shrimp and garden veggies. Tuesday - Cheesecake Factory (pick up) for my nephew’s 21st birthday. Wednesday - Steamed chicken and veg dumplings, fried rice.
Thursday - Chuck roast with garden veggies and pesto pasta.
@yellingbanana gurrrrrl ...when the city shut down in March, all of a sudden DH & I were home together 24/7. I learned the first week that we had to institute “alone night” or else I was gonna lose my ish. So Monday & Thurs nights, one of us got the living room and one got the bedroom. It saved us. I don’t know what I’d do in a pandemic with kids. I’d take three hour long showers or something.
Also if y’all can have me over for mashed potatoes and gravy and pad Thai I will love you forever.
Here’s the zucchini casserole recipe (in spoiler). After you steam or sautee the veggies, combine all these ingredients (blend well) in a casserole dish then bake @ 350 degrees F for 30 min.

and for the GTKY part of this thread I am an extrovert. I need a little me time, but I would prefer my me time to be with my H and DD. I try to get an hour or so completely to myself in the evenings though and that helps recharge me.
