I got an error message when posting the weekly check-in and didn't realize it posted so I posted it three times! Let's just use this thread to discuss food plans this week!
I found two recipes for this week I'm excited about...chicken thighs with shallots and cherry tomatoes and spiced ginger shrimp with cherry tomatoes, both from the NYT. We started a completely failed garden during quarantine and the only thing that kind of succeeded seem to be our shallots so I want to use a bunch.
I just don't seem to be having major pregnancy cravings for the most part. There were a few random things that I needed RIGHT when I thought of them a couple months ago but mostly I crave the same stuff I always do...pasta, cheese and salty snacks. Maybe random cravings would give me a more varied diet without me having to think about it!
I'm trying to get back to planning what we're eating for dinner every night. Since we've both been working from home since March all planning went out the window and we've just been winging it.
Thinking instant pot chicken noodle soup one of the cooler days this week, and maybe turkey chili over the weekend. Making pizza for dinner tomorrow. I've been spending some time this week organizing my recipes on pinterest so I'm. ready for fall cooking.
No cravings that are out of the ordinary. Noticing I get super hungry with no notice though, keeping all the snacks accessible.
I'm trying to use some week days to pack so I'm all about meals that we can have several times right now.
Sunday we did crab cakes and asparagus. I made an enchilada bake that will cover us for 3 nights and then we'll have chicken salad sandwiches the other 2 nights.
My husband made a huge pot of meatballs and pork ribs in red sauce (graaavy to his fellow Italian-Americans) on Sunday so we’ve got leftovers enough to fill us up half the meals this week. I want to make mung bean yellow curry and rice tomorrow, and I really need to do a grocery pickup after that. Really been craving a *good* fried chicken sandwich, Nashville hot, preferably. Yummmm 🥰 Pregnancy craving this time around is all things spicy and tangy.
Can I just say how excited I am that food sounds good again?!
Since I’m on “bed rest” for two more weeks until viability, I’ve been doing a crap load of instant pot or crock pot meals and my husband grills. But its getting old and I’m ready to be back to being able to do basic stuff. My oldest is also super picky so we’re eating a lot of quick and basic meals right now.
On the menu is:
Creamy ziti and salad Chicken and dumplings Grilled Hawaiian chicken, rice, and broccoli Teriyaki chicken bowls BBQ chicken sandwiches and watermelon Ground turkey/black bean tacos Mississippi chicken sandwiches
I’ve been sucking so much at meal planning that I finally caved and gave hello fresh a try. This is our second week of it and I’m enjoying not having to think so much about meals! We won’t do it forever but I’m enjoying the mental break right now.
