Anyone have any good Fall recipes and feel like sharing? Meals or desserts! I need to branch out since so far I still can't have meat or chocolate (*sad sigh*), and I figure others might be interested, too!

OK. SO I remembered one of my favorite soups before going gluten free was tortellini soup. It was large can of tomato soup, a can of fire roasted diced peppers, garlic, italian seasoning, and frozen tortellini thrown in at the end until it was heated up. Sometimes I'd put ground meat, sometimes other veggies...but usually just the basics.
These are my FAVORITE! A very filling cookie, definitely could eat them with milk as a breakfast. 😋
Amazingly Awesome Pumpkin Cookies
Ingredients:
4 cups flour, 2 cups quick cooking oats, 2 tsps baking soda, 2 tsps cinnamon, 1 tsp salt, 1.5 cups softened butter, 2 cups brown sugar, 1 cup sugar, 1 egg, 1 tsp vanilla, 1 15oz can of pumpkin, 1 12oz package of chocolate chips, optional: chopped walnuts
Directions:
Preheat oven to 350F. Combine first 5 ingredients, set aside. In a very large bowl cream the butter, gradually add sugars beating until light and fluffy. Add egg and vanilla, mix well. Alternate adding the dry mix that was set aside and pumpkin to the butter sugar mixture, mixing well after each addition. Stir in choc chips (and walnuts). Use about a tbsp of batter for each cookie. Bake on a lightly greased cookie sheet for approx 20 mins. Makes about 30+ cookies. Enjoy!

Sorry @manillabar, these do have meat in them. I made these last year and they are actually really, really tasty! You don't taste the pumpkin really, but it keeps the meatballs from drying out. And it adds extra fiber! Also, you only use a bit of pumpkin and I remember last year I had enough pumpkin in the can left to make pumpkin muffins so win-win.
@nolemama24 Did you know you can take a can of pumpkin and a box of brownie mix, mix them together and bake...and it's amazing? No other ingredients. Just the pumpkin and the mix.
A favorite around here is 5 can soup-1 can corn, 1 can black beans,2 cans of diced tomatoes and 1 can of kidney beans. Rinse corn and beans and add to pot with tomatoes, cook on medium to high heat for 30 minutes and it is done.We like to add tortilla chips and sour cream. It also freezes really well.
