What's on the menu this week? If you don't have the whole week planned out, any ideas? Since many of us might be feeling nauseous or have normal food aversions, you could just share what's working for you and/or getting you through the week.
I learned my lesson last week and have moved to less complicated meals...I love cooking but do not have energy / motivation by the end of the day these days.
Mon - portobello “patty melts“ (vegetarian - New York Times recipe)
Tues - cod with green herbs sauce & sheet pan baked feta w veggies
Wed - grilled veggie & mozzarella paninis
- pasta alfredo w frozen veg < this was actually lunch today ***
My husband works nights Thurs-Sat so I have backup plans if I don’t feel like cooking for myself
Fallbacks - Frozen tater tots 😂, chips & French onion dip, frozen veggie burgers and all the grilled cheeses
This week is dedicated to Rosh Hashanna prep, so dinner will be super easy, something that DH is making, or (preferably) both.
Tonight is three ingredient skillet. Which is a family favorite. (You brown ground turkey in a pan, add a cup of salsa (we use peach-mango, for a slightly sweeter version), and cook for another 5-10 minutes. And then poach eggs in the pan.)
@texas_t@SkilledSailor you could do a meal delivery service. I did one a couple months into covid when i was like eff all this cooking but cancelled it after a few weeks cause the frozen TV dinner-type packaging was depressing me. Food was good tho: https://www.factor75.com/r/home. There's are a couple other ones that Ive seen friends try called Balanced Bites and Cook Unity that also look promising.
@morgantu@texas_t Buffalo cauliflower was the recipe that made me throw in the towel last week lol! The recipe I had called for two dips in batter, one before baking and again halfway through baking and I said "aw h3ll naw." My husband loves it tho so hopefully I get motivated again someday.
We did fajitas last night, planning on breakfast for dinner, shrimp ( haven'd decided if we are doing bacon wrapped or fried), garlic chicken, pork tenderloin.

@texas_t sooo I tried to copy a restaurant version so this is not great as far as recipe because I made it up. But here goes. For the cauliflower: Mix hot sauce, milk, garlic salt, about 2 tbs melted butter, and flour into a batter. I would say mine is the consistency of a thick sauce. Coat cauliflower florets (I always do a whole head) and spread onto a greased baking sheet. Bake at 415 for 25ish mins, take out and brush with melted butter then bake for 5 more min.
For tacos I do the cauliflower, pickled beets and carrots, shredded lettuce, and bleu cheese dressing. I hope you are an adventurous cook because that is going to take some experimenting 😂❤️
@morgantu I was thinking maybe coating them thinly with the flour first and then baking until crispy and brown. Then, tossing it in a wing sauce butter mixture. That's how they do wings, hmmmmmm.
@mrosek91 no i didn't edit, I have just become an idiot who had it right, looked at a calendar during an online event with our Temple tonight and thought I had it wrong, felt so stupid and then realized I was actually right! I can blame pregnancy right? It's that or COVID lock in year is depleting my brain cells.
@Marz1pan I've been blaming pregnancy/mom brain for 4 and a half years. Also, you can blame the fact that there is no shofar blowing the first day because it falls on Shabbos.
Raise your hand if you didn't cook what you had planned last night and ordered Chinese food to eat with @mrosek91 in spirit 🙋🏽. All I wanted was egg rolls and it made me soooooo happy.
I made stuffed poblanos last night, and fed the kids spaghetti. The poblanos were soooooo yummy! Especially since everything sounds gross to me right now.
@yellingbanana Sounds delicious! What did you stuff them with? I have received a bunch in the last couple of weeks and don't know what to do with them.
