Leftover chicken pot pie Lasagna slices from the freezer Pulled BBQ chicken Either tacos, hamburgers, or chili (pulled out some ground beef and we will see what sounds good)
I have been feeling better, but around dinner time the nausea really kicks in. I probably need to shift to cooking bigger meals for lunch instead!
We’ve been doing hello fresh since quarantine started and have burgers + zucchini fries, zucchini boats, pork and green bean stir-fry, and balsamic cherry chicken this week. I made a large pan of chicken sausage orzo that I’ll have for lunch most of this week and we’ll grill whatever meats we can find at the store for our other dinners this week.
I’ve been lucky that I’ve had very little nausea and there hasn’t been anything I’ve been unable to stomach yet. An apple and peanut butter cures any morning queasiness I have.
We don't stock a lot of food in our freezer, so we are still grocery shopping at least once a week. Hoping to make it to the farmers market soon, but they just opened a couple weeks ago and people are still figuring out the proper social distancing thing there so we are waiting!
@danife - We get Hello Fresh meals too, they help bring a little variety to our food!
My menu currently includes: Cherry balsamic chicken - Hello Fresh Beef ragu spaghetti - Hello Fresh Crockpot chicken w/rice and zucchini Leftover bbq from yesterday (ribs & brisket)
DH smoked a turkey yesterday - so we've got leftovers for a few days. After that I'm going to make Italian crockpot chicken pasta and maybe beef strogonoff. It's going to be cold this week so I just want comfort foods.
Our CSA box starts up next week and I can't wait for the veggies. I'm hoping we get some beets right out of the gate.
Last week we ended up having some pretty great meals! Bahn Mi sandwich, korean rice bowls, penne alla vodka. This week I'm at a stump. We had Chinese food last night so that will be leftovers at some point..probably Pizza on Friday since it's been a few weeks...that's about all I know right now (:

Bruschetta Chicken- hello fresh balsamic & fig beef tenderloin- hello fresh Mexican chicken & rice bowls- hello fresh buffalo chicken, potatoes, asparagus pasta and meat sauce and we will figure the rest out later this week
It’s not Monday but it’s my Monday because I work 3 12 hour shifts in a row starting tomorrow! This is what I’ve prepped! Trying very hard to start eating healthy again lol
- avocado toast for breakfast - apple for a morning snack - cabbage coleslaw and vegan chilli for lunch - sweet potato, honey garlic chicken thighs and asparagus for dinner
I'm late to the game but here is our week: Monday: we did breakfast, eggs, hashbrowns, sausage Tuesday: asiago chicken burgers with mushrooms and fries Wednesday: ziti or lasagna Thursday: left overs Friday: planning on grilling some chicken if it doesnt rain Saturday: not sure yet but probably something in the crock pot
In a slump this week since hardly anything sounds good. My husband has been making the menu (so goodbye, healthy!). The first trimester is all about survival anyways, amirite?
Monday: steak tacos, borracho beans, pineapple (gimme all the fruit!) tuesday: pizza Because I was starving wednesday: Olive Garden dressing marinaded chicken, salad, wild rice, maybe roasted broccoli too.
Thursday: hot dogs and Mac and cheese
I will let y’all know what really hit the spot for me last week: baked potato for lunch one day. Also, we had leftover chopped brisket to use up, so one nights dinner was bbq frito pie. Fritos, chopped brisket, heated bbq sauce, ranch style beans (are these only a Texas thing?), cheese, sour cream.
