Meal Plan Monday

Anyone eating anything other than crackers and ginger ale?  What is your go-to food?  My husband has been on his own all last week and probably this week as well.

  • My husband smoked a brisket yesterday so we’ll eat off of that a few times this week. 
    Tonight is chicken parmigiana with noodles and broccoli
    not sure what else - it’s hard to plan ahead when nothing sounds good.

  • I work the next three days (7am-7pm) so I made smoothies for breakfasts (strawberry Arbonne protein with banana mango and almond milk) then chicken and wild rice soup for lunches with an arugula and apple salad and for dinner I made a healthy ish Shepard’s pie with the mashed potato topping! And I’ve got watermelon for dessert! I wanted to throw up cooking it all yesterday but thankfully it’s going down okay today so far!

    Don't hate me, I haven't gotten many aversions yet. I think I'm among the very lucky 20% or so who don't get much morning sickness (unless I'm hungry, I need to eat a lot of carbs and salt). Last time I was mostly fine as well, as long as I catch it early with a snack and drink enough water I'm mostly just bloated and tired, with indigestion and some RLP.

    The one day I was sick I made those curried red lentils, which we ate with rice and "roti" (i.e. toasted flour tortillas). I seriously need to make it again, it was the perfect combo of salty and starchy, with ginger and turmeric to help settle my stomach. I made it in the Instant Pot (slow cooker would also work) and added chopped kale, which just melted into the lentils.

    I made a lasagna yesterday and we'll eat off of that for a few days.  Other than that I need ideas - we have some beef stew meat in the freezer, maybe I'll get that out and do a stew later this week.

    @akoros mmmm those lentils sound good. I have the Madras microwave pouch lentils from costco. I might have to have those with rice. 

    Last weeks meal plan went down the drain when the nausea hit. Cooking food makes me want to gag but eating food other people make seems to be ok :lol: I just want a bunch of salty, fatty, carb-y stuff. I got stuff to make chicken verde in the crockpot and crockpot chicken and dumplings. So those will be two options. The other nights will be whatever my partner can throw together. I made baked chicken legs, mashed potatoes, and roasted broccoli and cauliflower with lime last night. So tonight I’m not cooking lol.

    Spoke too soon: Demolished my lunch (salad) and now feel queasy. Could be worse, though.

    Yesterday I made a big pan of green curry chicken with eggplant, peppers, and rice noodles. That'll be lunch for a few days.

    Unsure about tonight. We have a lot of frozen tilapia, so maybe that with just some steamed broccoli and couscous (our go-to starch). Or maybe just some grilled chicken, since it's so lovely out. Tomorrow is obviously going to be Taco Tuesday/Cinco de Mayo. Defrosting a bottom round roast that i may make into pot roast later on this week. Debating what else in my meal list to prioritize for this week

    Totally forgot that I didn't cancel our Home Chef order for this week (really wanted the enchiladas). That makes things much easier, now I've got ~15 meals "on deck" (i.e. can be made with ingredients we currently have on hand).

We've been pretty happy with it, under normal circumstances it makes it easier to not have to plan meals out, and my husband is also more likely to help out with cooking because it removes the guesswork. However, since I've been working from home we've been skipping our weeks since I've been having a bit more fun with planning our meals (this is also what I like, you can skip weeks without a penalty). However, enchiladas....

    Have been overall not nauseous so generally I've still been cooking a lot. More than anything I'm exhausted so not all meal plans pan out - sometimes take out just has to happen (grateful we can swing it!)

    Today: Feta Spinach Turkey burgers, sweet potatoes fries, raw carrots and peppers
    Tues: Chicken enchiladas 
    Wed: Korean beef stir fry
    Thurs: lemon chicken, rice, green beans
    Friday: Teriyaki salmon over rice with broccoli

  • Tonight we’re making baked chicken with roasted garlic grape tomatoes and broccoli. Tomorrow we’re having baked chicken wings lol  Mmmm.. 
  • Tonight I made pork bahn mi sandwiches.
    Getting takeout tomorrow for cinco de mayo.
    one night this week will be penne vodka.
    another night will be Korean beef rice bowls.
    and maybe pizza Friday?

  • We had spaghetti for dinner tonight with homemade sauce.  It went okay.  I also made a bunch of rice and have Jello coming.  Hopefully we can get this sickness under control and then I can enjoy the brussel sprouts and asparagus lanquishing in my fridge.

    @mindyb2019 I’ve never made them before! But we had leftover bbq’d pork loin and we were watching Diners, Drive ins and Dives on Food Network and they had one on there and I figured I could totally make that! And it was super easy (AND DELICIOUS!!)

    I'm just going to say that I applaud all of you who are cooking and planning meals!!
    I'm struggling to eat anything at all and I can't stand the smell of everything, including something I'm actively eating.  MH has been picking up whatever I'm craving that day and cooking it for dinner, while he's at work I've still just been doing whatever smoothie or frozen meal I can stomach.
  • @gh1219. I hear you!  In the same boat over here. Rice, plain toast, and Jello seem to be okay.  Also fruit smoothies made with milk.  My doctor said just eat anything you can and we will worry about the nutrition later.
