I’m trying to up my fiber intake so I made a super bomb tasking hot oatmeal for breakfast today!
- 1/2 cup of steel cut oats - 1 tbsp peanut butter - 1 tsp flax seed - 1/3 cup blueberries - 1 tbsp cinnamon - 1 tsp maple syrup
pour some hot water over it all and voila! I’m trying really hard to get back on the healthy eating train after being a disaster this last month! Specifically with carbohydrates I’m trying to get them from sweet potatoes, quinoa, brown rice, oats and other starchy vegetables!
My partner hurt his leg so meal planning is a little rough this week since he can’t do anything so I have to do everything for our son, cook, clean, oh and try to work from home. NBD
Tonight we’re getting takeout Mexican the rest of the week is... Sloppy joes and salad sweet and sour shrimp with rice meatball subs (him) spaghetti and meatballs (me) stir fry fridge clean out burgers and fries
Monday- Teryaki chicken, whatever veggie I can find in the fridge, and rice Tuesday- spaghetti with meat sauce Wednesday- tacos Thursday- not sure/leftovers friday- take out
Monday - salads with shrimp Tuesday - grilled chicken with veggies and rice Wednesday - chicken parm (we have left over sauce and breadcrumbs from a meal on Sunday) Thursday - spinach and bacon quiche Friday - take out
We do those dinnerly kits, and I love them. This week we have chicken fajitas, meatloaf with mashed potatoes and fresh green beans, and BBQ chicken with a baked potato and salad coming, and I have beef and udon noodle soup left from a previous order which will probably be tomorrow. It's pretty affordable, and it takes a lot of the stress out of it.
Tonight I made lemon garlicy shrimp and rice Tuesday: some takeout from an Un-chosen restaurant in a town I used to live in since we have to go there to pick something up. wednesday: burgers

Was going to move on to IVF with DE, but have decided not to. Will be leaving it up to the universe now.
